What a great idea to use the potato oil in the dough to give it a potato taste. I also roll out dough for savouries in potato flour and when they back, there is a hint of potato taste.

@@SpainonaFork We tried them for dinner last night and they were absolutely wonderful. The parsley, potatoes and fish make a good marriage. Potatoes and flour are always there in the pantry and we will be making these empanadas often. Thanks for sharing. Lived in Calella, Costa Brava way back in the early 70's, wonderful people, wonderful country and ........wonderful cuisine.!!

I say use warm water and let the dough rest for 20min before you form. That's what I've been taught from my grandmother who has made thousands of empanadas.

Nice recipe! I would use the oil from the tuna can for the dough. Otherwise, it will be poured away. Certainly gives a good taste to the pastry

Love your recipes! But could I ask you if it's possible to say how many grams your potatoes are? Because Yukon gold potatoes aren't very common in the stores where I live, mostly it's Nicola or Charlotte (waxy variants) and they differ in size. And potatoes from the field might be WAY bigger. xD Are 3 of them mayby the same as 4 portions of potatoes (=800G), or you use bigger/smaller portions? Or if you don't like to mention it in your recipes, mayby you wouldn't mind seeing what your average Yukon Gold potato weighs and telling it to me here? I greatly apprecieta the advice!

I could not tell you the exact weight of the potatoes, for me I usually use 1 potato per serving, so I guess 600 grams would be pretty close :) much love
