You could simply add some light soy sauce (生抽). That should be good enough. Or, for a different taste, you could try fermented black bean (豆豉) or Shacha sauce (沙茶酱) or so forth. Fermented black bean gives you a smoke taste and should be fried in oil to bring out its fragrant smell before adding minced meat. Shacha sauce has a taste quite complicated to explain and should be added half way while the meat is being cooked.

You should be able to get the sauce ingredients from a larger supermarket. But, any decent asian grocery store will stock the sauces listed on the video.

Here’s a recipe for hot pot that we enjoy very much. kzbin.info/www/bejne/f3Xbg5V8hJl-d68 In Singapore, it’s called spicy chicken hot pot or some restaurants call it Odd Flavoured Chicken- literally translated from Chinese. You can cook this as is then also standby a separate pot of chicken soup. After a few rounds of eating, you can add chicken stock to top up the soup. Please remember to remove the seeds from dried chilli otherwise it will be too spicy. Hope you’ll enjoy it. We love 香辣酱。we thought some of you may have it at home since we used it for our mouthwatering chicken recipe so we wanted to help think of ways to make use of the same sauce to cook other dishes. If you can’t get hold of 香辣酱, you can look out for spicy broad bean paste. We use that a lot in our cooking too. Have a great weekend!
