Fantastic! I grew green beans for the first time this year. Both the kind you are using and a couple varieties of yard long beans. I’ve been eating green beans almost every day and haven’t gotten tired of them. Is the red paste Very spicy? I ask because I don’t have a very high tolerance for spicy. 🌶️

The original version of this dish uses yardlong beans, so those will work too! How spicy the doubanjiang is depends on the brand, but it is moderately spicy. You could get around this in a few ways. One way would be to cut back on the amount of doubanjiang and then use soy sauce or salt to season it. Another possibility is to eliminate the doubanjiang altogether and thin out some miso with a little water or sake and use that instead.

Doubanjiang is a very salty condiment (kinda like a spicy miso), so there is no need to add any additional salt.
