I made this today and it was SO good!🥺❤️ I didn’t have paneer but I used cheddar instead. Surprisingly, the spinach really gave it a nice flavour (I thought it would’ve been overpowered by the spices, onion and cheese)😍 I would love to try this recipe with beetroot instead of spinach next time! I just recently made a nearly identical recipe! I loved them so much I used them in the menu when making a huge Indian dinner for my sister who knows nothing of Indian food and she loved these, as well as all the rest! I love your use of amchur in this recipe, and I am going to add that to my recipe as well. That is the one biggest difference, and I love the flavor of amchur. You are just so personable to watch and listen to. Thank you Chetna for all the amazing foods. I am in love with all things Indian, though I have never been there in this lifetime.

Oeh! Feel the urge to make this too. The Turkish baker near my workplace (Amsterdam) has potato-feta filled pogaca sometimes: also a sort of stuffed bread. One of my favourites. But first I need to get me one of those round, raised rolling boards!

Your recipes are nice. I thank you. I'm learning the vegetable ones, so I can cut back more on meat. I have cut beef down to 4 times a month. Sometimes no beef a month. If the vegetable dish is rich enough, I don't seem to miss the meat. I like the stuffed bread idea. A good warm lunch. So, thanks again.

Question: Can these be frozen successfully at any stage? I’m just 1 right now and I’d never get through a full recipe before they went off and only making half seems a shame. I think of all your bread recipes this is the one I most want to make. Not sure why I haven’t seen it in the year that it’s been up but I know it now!

u can use it but gram floor becomes very hard when made into paratha...make a small batch to test if it works or not.

I just made this here in Philadelphia. The dough looked stiffer than yours - and it was hard to roll out. Of course it was my first attempt at parathas. They taste a little doughy - does that happen when they're not thin enough so don't cook all the way? I figure I will heat them in an oven for a few minutes before serving.... Ideas? Anyway, it makes me appreciate your technique!!

next time add a bit more water if the dough is hard. The parathas were doughy maybe you didnt fill enough or not rolled thin enough

Not sure that chetna does BUT “my heart beets” Ashley Singh has both roti and naan recipes that are paleo which don’t use wheat flour. I haven’t tried them but the dough looks flexible so it might work?

@@siamesejasmine it should work, but I have yet to try it; my wife has lactose problems, but paneer usually is OK in moderate amounts; the butter and ghee, however, are not possible for her even if she takes the lactase tablets; we have some vegan butter substitute for those, but I suspect oil is just as good a substitute for the cooking part but not as a topping at serving.

They do. Just don't fry them with oil. Defrost in toaster then shallow fry in a pan adding oil or butter. Works each time.
