Because she's impersonating Sofia Vergara. It's for a joke about the miscasting. The real Sofia Vergara may be problematic. But why aren't their more people with foreign accents in the Star Wars universe anyway. Yes, I know this takes place on a galaxy far far away but after all that galaxy is replete with people with Brit and a few American accents, but no others, even if we are supposed to be watching translations. Maybe the Evil Empire villains could have Russian (sorry Russkies, I know you are mostly really nice people, but considering Russia's current despotism), Iranian (again apologies to nice Iranian citizens, not their government; I've had a couple of Iranian friends), Chinese (ditto) and Korean (North) accents. And don't get me started on our homegrown alt-righters (in states one of which I was born in).
