Ingredients
- 2 eggs
- 60ml oil (¼ cup)
- 120ml milk (½ cup)
- 5g vanilla (1 tsp)
- 225g gluten-free flour (1 ¾ cups)
- 25g cocoa powder (¼ cup)
- 200g sugar (1 cup)
- 10g baking powder (2 tsp)
- 90g chocolate chips (½ cup)
- 20g chocolate chips (2 tbsp)

Instructions:
- In a mixing bowl, whisk together eggs, oil, milk, and vanilla extract.
- In a separate bowl, sift together gluten-free flour, cocoa powder, baking powder and sugar.
- Gradually add the dry ingredients to the liquid mixture, mixing with a spatula until well combined.
- Gently fold in chocolate chips into the batter.
- Chill the batter in the refrigerator for 30 minutes.
- Preheat the oven to 200°C (390°F)
- Fill muffin cups 3/4 full with the chilled batter.
- After filling muffin cups, sprinkle an additional 20g of chocolate chips on top.
- Bake in the preheated oven at 200°C for 7 minutes, then reduce the temperature to 170°C (340°F) and bake for an additional 15 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool before enjoying your delicious gluten-free chocolate muffins!
