Is there an alternative to calamansi? I've tried making it here in the UK with lemon and it never ever comes out right. I get that calamansi has a slight sweetness but regardless I don't think I have the proportions correct with the lemon. Or does anyone know how to make it with the bottled calamansi extract you get from Pinoy stores?

Hi! Nowadays, most of the items in the market are not local. I remember our research project when I was in high school. We did an interview with the sellers of vegetables in our local wet market in visayas, we were all surprised to know that 90% is from china. Farmers nowadays sell their lands because they cannot compete with the price of imported goods. Slowly, unconsciously, we are importing all our food because we dont have local producers. Thank you for bringing this topic and for this reminder to support our local farmers.

Chef Allen knows how to cook but isn't prepared to teach, at least on camera. I feel like the instructions are all over the place. It felt unorganized compared to Erwan's usual videos with step by step instructions...

It is actually "bistek", not "beef steak". That's a common enough misconception. The name comes from Spanish bistec or bisté, which in turn is derived from English "beefsteak". The name did not directly come from English. The original full name of the dish is bistec encebollado ("beef steak in onions") and it is very likely to be _originally_ Filipino, even though it is found throughout the Spanish-speaking world. The evidence is the name. Another name for bistec encebollado in Latin America is "bistec Tagalo" (lit. "Tagalog beef steak").

Finally able to watch a chef who cooked beef "bistek" steak pinoy style properly. No suka , no spring onions, no flour/corn starch etc. Divisoria always have white and red onions mostly produce from nueva viscaya, nueva ecija or pangasinan.

I showed it to my husband and he wanted to try it because he was expecting for a medium grilled beef as steak 😅 but he said it looks like adobo because of the colour. Nakakagutom tuloy! 😥

Maybe because "steak" in western countries is the common steak; a slab of meat which is far from "bistek" that we have. Completely different from each other and confuses most foreigners a lot ...

I just cooked Bistek few days ago and used lime because it's hard to find calamansi here in Australia. I find lime less acidic than calamansi, and less aromatic than lemon, so it's okay because it's not as so aromatic as lemon but not so okay since it's less acidic than calamansi. Calamansi is still the best for Bistek.

It will be the first time I will be putting a thumbs down to this, (sorry mate!) the beef is getting overcooked, anthe chef is so boring and not very appealing to watch, big FAIL! Tender meat need not be cooked very long as what he's doing, especially sliced very thinly, omg.. been cooking for my family in Australia and never had to cook thinly sliced steak for a long time like that. Even if I use lemon instead of calamansi, same taste, still good, depends on the cut of steak really. We also use thick steak but no marinating needed, many Filipinos like their steak marinated but in proper steakhouses you won't see steak marinated. For very thick steak, no marinating is needed to enjoy the full taste of the beef. This Chef failed in many points, don't invite him anymore Erwan please!! Very lousy!

Really bad video. Don’t waste your time. I’m sure he’s a real chef but never said the recipe. There’s a link below of the recipe. Who knows if it’s really his. Some people are very secretive about their recipe like this chef. This video is mostly life history. OMG

Bistek is Spanish ( Bistec ) Bistec Tagalog in Luzon, in Iloilo it is called Carne Frita.

My version would be brisket with fat caps. If im in the province or something id tenderize it using wood as a heat source(that smoke flavor from cooking with wood is love). Ill just use meat tenderizer if im lazy which is most of the time. But all pretty much the same with 2 batches of onions aaaaand I put a little oyster sauce. Edit: And no kikoman as soy sauce for me, coconut brand is what I use.

Since a kid til now this is my favorite viand. My mom tend to call it bistek or beefsteak tho she's using pork. Hahaha. Definitely, this is the same way how my mom cooked this! Bring backs the memory of every Sundays. 😊

I use spiced vinegar on mine and marinate it for couple days. Use instant pot for 15mins since i like the beef soft and transfer it on the hot pan w onions to kind of stir fry it to give that filipino taste 😊

Tutuyuin ang binabad na carne( loin na parté) bago frituhin, paper towel o iba pa na cloth, para hindi magpawis o ‘sweating’…pero mataas ang level ng init para mabiglang subó ng pirasong hiwang manipis at maiwasan ang katas( puedeng kutsarahin ang ito) sa pag-frito…tiyaga lang at discarteng veterano…imo…serve with sautéed broccoli flowerets or cauliflower in ideal butter y sea salt y Jasmine Thani fancy rice…rice es vida o arroz es vida…imo…hindi contra vida duh😢😊

yes, but we adopted the term and contextualized it. That is why bistek is considered as 'Filipino food' like adobo.

I feel like the interviewer is asking honest questions and the chef is just ignoring him and being rude or just super uncomfortable with being recorded. Either way I did not learn how to make beef steak and just watched two people converse very awkwardly.

I am not sure if "bistek" has a garlic? Authentic bistek only has toyo, calamansi and onion. Plus of course sugar. Anyway, food nowdays has different version and it also depends in what region you came from. The way he cooked it definetly not a tagalog version.

why dont you learn or speak Tagalog. your sister speaks it and even has a filipino accent in english. moi aussi jsuis francais et philippin comme toi, mais je parle les deux langues. tas des origines philippines, tas vecu aux philippines, mais tu fais jamais l'effort de parler la lange du pays et de manille

the audios of your videos are terrible. the conversations itself has a very low volume so i have to raise the volume. but when an interlude song plays, the volume is so loud, i get surprised and then adjust the volume. and when the convos start i have to raise it again. its an endless cycle. pls fix it.

It releases all that liquid because you put too much meat all at once. What happens is that your meat gets boiled instead of sear which majes the meat tough. Try frying a few pieces at a time and then when you are done you fry the onion in the oil with all the flavor in it...the onion will soak it up. For the sauce there will be some left from the marinade...add a little of water and simmer it in yhe same pot and pour over the meat.

Are the plants draping over your kitchen for decor during shoots or are they really there all the time? Seems like a safety hazard. Awesome vid tho.

Looks awesome but that first step seems unnecessary. Just sear it without crowding and pat dry the marinade.
