Been in the business since 1990!…. Would skip the video games with my friends to watch Justin Wilson, Yan Can Cook, The Frugal Gourmet, and Julia Child! In the early 1980’s! This dish holds a special memory for me. When my late husband and I married in 1984 we had our first dinner, as husband and wife, that was Steak Diane and Caesar Salad (made right at our table). It was so good. I'm sure Chef Jean Pierre's is even better! ❤❤

I LOVE Steak Diane. It's an old favorite I haven't had in years because I lost my recipe. Now I am back in business. Thank you Chef Jean Pierre!!! You have such wonderful recipes. Anyone who says you talk too much can go pound sand talk as much and cook as long as you want. I could listen to you all day. And often do. Even my husband loves listening to you. He is making your Oven Roasted Ribs right now. You make me smile, and you make me want to cook. I wish I could have gone to your restaurant when it was open. I love cooking shows, but yours is the best of the best. And you and Jack working together are like a well-oiled machine, smooth as butter. I love his quips. They are great, just like the rest of your channel. Thank you again for the Steak Diane recipe. That is my "final meal" meal. And those Pomes Anna potatoes look pretty good also.

After learning from this channel for two years, I just recently picked up on the fact that Chef is playing the stove like an instrument. He doesn't teach that part really, because it's second nature to him, but understanding your stove and heat is just as important to having the ingredients mise en place. Look how many times he turns the heat up and down in just a minute. I just realized that a month ago and it's made such a difference.

I'm glad that you mentioned the cooked roux. I don't care for the texture of cornstarch thickened sauce, so once a week, I make a batch of blond roux, put it in a small deli container and use it to thicken any gravies or sauces I make that week. During the summer when we don't use much, I put it in a silicone ice tray and freeze it. The hexagonal trays hold about a tablespoon per well, convenient for small amounts of soup or sauce.

And also - accept the fact that variation and freedom to change, experiment, and take cooking light-hearted is GOOD. I think I'll soon try this one (sans butter, for Kosher-food reasons - sorry chef J.P.) but I promise I'll find a creative way to make the sauce wonderful and luscious...

I was finishing up my morning yoga on KZbin, waiting for Thursday's recipe...right on time as I grabbed my water, called my husband to the tv. We love the way you cook your steak! It looked perfect, and I certainly remember steak Diane from the 70's...looking forward to enjoying it again, at home! I'm redundant, however, we made your creamy garlic shrimp for lunch today, oh my, love this dish so much! One of our favorites when we are not cooking beef. While I can't make this particular recipe (my bff is deadly allergic to mushrooms), I always value the techniques being shown. Such as parboiling broccolini and then stir frying it. I usually just serve steamed veg with most dishes.

I've never heard of being allergic to mushrooms.

She is anaphylactic to fungus derived things like penicillin, blue cheese, soy sauce, mold, etc. I have seen her hospitalised after a patch of mushrooms were accidentally kicked over up-wind of her. I have sat and watched for secondary reactions after people have come near her with soy sauce. She is a school teacher, her husband is retired military, her eldest is a doctor and her youngest in retail. She cares for her 94 year old mother and is the bravest person I know. So when I cook for her, I triple check the recipe and if I can leave out the deadly stuff? I do.

When I was about 14 My Mom realized I had the aptitude to learn how to cook and Steak Diane was one of the first recipes she taught me. Especially since everyone in the family loved it. We did it slightly differently however. We put dry white wine and mustard in the sauce. Now that I have spent years cooking professionally I just had a thought, I wonder what it would be like to add some good Dried English Mustard to the sauce...
