The easiest empires I've played as are 'Gestalt Consciousness' or a 'One World' empire. For the 'One World', I always take the 'Life Seeded' Origin/Civic. The machine empires are simple because you don't need to worry about about food or consumer goods. The one planet is simple enough because you don't get too overwhelmed with balancing everything. What I haven't done yet, is make an empire specifically to exterminate the Galaxy. Yet

I have started playing Master of Orion 2 when I was around that age. Armageddon bombardment and planet destruction were just one click of a button without having to wait months of game time for it.
