Recipe here: www.joyofbaking... Stephanie Jaworski of Joyofbaking.com demonstrates how to make Sticky Buns. Sticky Buns are made with a buttery rich yeast dough, similar to a Brioche, that is filled with cinnamon sugar (you can also add some chopped nuts and/or raisins) and topped with a delicious caramel glaze that contains chopped pecans.

Stephanie, thank you sincerely for this. The first weekend I worked in Jack's Bakery at 15, I learned how to bake these because my brother loves them. I also learned to bake French bread because my English teacher doubled as the French teacher. Happy memories!! 😃

It looks sooo complicated...I’ve put all the ingredients in the mixer and then I started the mixer. They turned out really nice and fluffy and delicious. I’ve let them sit for about 15 min, rolled them , cut them, placed them in the pan and I’ve let them rise for about 40 min.

The consistency of these looks like what I'm looking for in panettone. It's very hard to find a recipe that yields a product as light and fluffy as these are. Any thoughts of doing a panettone demonstration? There are many recipes on the web --- but I trust yours before all others. ;-)

Stephanie I absolutely love these, they are magnificent. Can't believe how much kneading the dough needs and the procedure of adding the sugar and butter afterwards is so different. I have to try and make these, I have a question please. If you wanted to refrigerate them overnight covered, will they rise overnight in the fridge ? The reason why I ask is because of the yeast. My pizza dough rises in the fridge if I refrigerate it after I've made it.
@joyofbaking

What is cake flour.. Is it what we call self raising flour in the UK?
@CraftingWithJeff
@CraftingWithJeff 7 жыл бұрын
No. Cake flour is a flour with a lower protein content than all purpose flour. This makes for a softer end product. Self-raising (self-rising in the US) flour is plain flour (all purpose flour in the US) with leavening already added. I've read that you can approximate cake flour by substituting a couple of tablespoons of cornstarch for plain flour in a cup of flour but I have never tried this myself.

One silly question, would it be weird to use ground nuts instead of pecans or walnut or almond or macadamia or cashew or stuffs, those nuts are really really really pricy here.
