1 thumb-sized young ginger, sliced thinly
4 cloves garlic, halved
10g cuttlefish floss (Roland stated 8g in the video, but we found 10g is perfect.)
300ml water
0.5 tbsp oyster sauce
A pinch of sugar
A pinch of salt
200g baby kai-lan (Chinese broccoli) or any other leafy greens
Some cornstarch solution
1 red chilli, halved and deseeded
1 egg, beaten
0.5 tbsp Chinese cooking wine (Shaoxing Huatiao wine)
A few dashes of white pepper

Hi Top Chef. Liked many of your recipes and followed a few for daily meals. Could you add 炸酱面 and Mutton Kambing Soup in your list? The noodles should be easy but it's weird that such common dish in China is nearly not seen at all in SG and Msia. Kambing Soup is one of my favourite and really want to see if you could simplify it.
