See how when you pulled the fitting out, the tape was pushed up the fitting? You may have had the tape wound backwards, or installed too thick. The tape should wind around the fitting so that the tail at the end is opposite the direction of rotation. It pulls the tape down as it tightens, rather than push the end up. If you're right handed, hold the tape in your right hand, and the fitting in your left. Hold the roll with the tape end parallel to your thumb, with the tape on your thumb side. Point the fitting away from you. Place the outside of the tape, the side closest to your thumb on the opposite side of the threads on the fitting. Pinch it to the threads with your left index. Roll the tape around the fitting once, maybe twice. More than that and it cannot go between the threads well which results in the tape pushing up the threads instead. It's kind of hard to explain in text form. You want the outside of the roll of tape to contact the outside of the threads. It works easier that way in my experience. If you are looking at the end of the threaded fitting, you are rolling the outside of the tape clockwise around the fitting, putting the outside of the tape on the inside of the wrap. It will roll on the threads either side used, as long as it gets wrapped the correct rotation, but it's easier to unroll it onto the threads if done as suggested.

Those quick connect fittings can be rebuilt when they leak too. Screw it apart, note how the pieces are arranged inside. Remove, clean, replace the rubber gasket if necessary (often, cleaning it is enough). Some of the fittings screw together behind the coupler, some, you need to grip the front end with pliers while turning the rear off.

As for sealants. You can use plumbers pipe dope, but it takes a long time to dry, it can take months for it to hard set. If you want to use it faster, look for a hard set pipe dope, or thread sealant. Loctite recommends 545 for this purpose. Whatever type you use, look at what it takes to release the parts again. High strength sealant often requires heat to release the part. You don't want to use heat release sealant on parts with rubber seals, or other meltable parts. Parts that need never move, use red. If you might need to take it out, use blue. If you need to remove it again tomorrow, use tape. My recommended brand of tape, from my experience, for this application, would be Hercules 'tape dope'. It's a bit thicker, and more durable.

If you have old dope in the threads, a shop pick, or dental pick, will allow you to scrape the bulk from the threads. Then switch to a wire brush and acetone. It makes short work of taking those threads back to 'new' looking.
