I am so blessed to be able to buy locally raised honey! It does cost a bit more than buying in bulk, but it is made from blooms that grow close to me.

Speaking of maple I'm boiling some down now. what I do for last yrs maple syrup ( I can them in jars) if I see mold on top I take it out of jar remove the top layer and reboil it then recan it you can also freeze maple syrup and it will last longer . Here in Mn we started earlier than normal although we are in a cold snap right now. I tap 5 trees 2 are sugar maple 3 are silver maple mixing them gives me a wonderful flavor to my syrup.

We tapped our maple trees for the first time this season. We only have a few trees - we have red, silver and maybe there is one sugar maple. I need to figure that out yet. We are at the end of our season and this year it's been up and down with this crazy weather. We started late, but still got about 9 gallons (of sap) so far and not sure we will be getting any more. Silvers are definitely done because they have budded out. We got about a pint and a half. Super easy to do and no, you don't need all the gadgets that many people use. What I love about making our own is that we don't filter it. We keep all that good stuff in there! Thanks again for the great content! God bless!!

So I did find an organic cotton pillow. It comes packed full with organic cotton with a zipper on one end so you can take out as much as you want to get it to the proper firmness and size you want. So far I am very happy with it but still keep having to remove more of it as it was packed so full. I think I have taken out almost half and can make another pillow with what I have removed! If it's alright to share a blog, Heidi, this blogger I follow has an amazing list of 27 trees that people can tap for syrup. I get a lot of my foraging recipes from her. Granted, she lives in Vermont so she has a much broader range of trees that CAN be tapped for syrup. The forest I live in, I think there is only one kind of tappable tree and it doesn't even grow in my immediate area. Of course, if anyone tries this, don't forget you HAVE to boil it down first otherwise it's just runny, bitter sap. Her blog is called Practical Self-Reliance, and the title of her blog is called 20 Trees to Tap for Syrup.

I did vacuum seal maple syrup and kept it in a dark cool basement away from the light. It did mould on me. I took large jars and now keep it in the fridge.

I am thinking the type and quality of the syrup may be the issue. The more water content, the more likely it is to mold

I buy local raw honey in large 3kg plastic tubs then transfer it to user-friendly sized glass jars when I get it home. I will buy it glass jars whenever possible 🍯 😋

I think this is such an important video for that fact alone that sugars like these are some of the best preservatives. I've had people laugh at me when I tell them sugar and honey are preservatives and that they'll last forever in the right conditions (minimal light, arid, cooler temps). It's why jams and pies could just sit out (covered, of course) without being canned and would last the entire few days/week a family would go through them in the pioneer days. Natives Americans also stored honey and whatever syrups they made without those going bad. I really am disgusted by the narrative that something isn't kept in your fridge, then it is bound to spoil within a few days. That has only ever been proven true in my 40 years with modern food (all the highly processed and heavily genetically modified [even if by generations of selective breeding]) and mostly during hot summers.

Apple Syrup is room Temp Stable, also. I never heard of apple, unti now. You start with Cider. Boil with same Sugar Technique as Maple Syrup. Mold means water content. I bought a brand new maple Syrup and it CAME WITH mold. I was upset. I took the bit out and the rest hasnt spoiled. Bottling Hot, gives condensation. That molds.

I had some mold once too. It was several months after opening, and yes, I think mine was stored in the plastic bottle it came in. We just don’t use it that often. But so far, I can keep (opened containers) it in the the fridge indefinitely

I buy my hundred percent maple syrup comes out of Canada in a glass bottle from Costco in Nashville because I’d rather not use plastic and by the way, thanks for the heads up on where to buy my turmeric

Thanks Heidi! Is it possible to store prunes in vacuum sealed quart jars? They seem kinda moist compared to raisins...how long will they last?

Yes, if they can be stored in the bag or container purchased in on a shelf, then they can be vacuum sealed in a jar. The sugar content preserves them and vacuum sealing prevents them from getting hard

I haven’t had any problems with maple syrup molding. I bought several jugs when I was in New York, about 2010 if I had to guess, and still have 2 jugs. They are in the original plastic jugs though because I never thought about jarring them up. Do you water bath them or just vacuum seal? I’ve also never vacuum sealed liquids. Thanks again Heidi! It's my understanding if you get mold scrape it off bring it back up to temperature at 219 ° refill filter and recan.

The syrup you get in plastic, like the Kirkland jug, you open and seal in glass right away, right? That's what I understood but want to confirm. Thank you Heidi! ❤

It can be kept in a cabinet, all the molasses I have is "store bought" but simply organic and purchased in bulk

As u can see I'm not Heidi, but I would like to comment, I was raised with molasses, it was our sugar, when sugar was rationed. I still use molasses in several things as well as real organic honey. I've always kept both in glass and on shelf in cupboard for years. PS, my grandchildren love my molasses cookies for Christmas presents, I roll out the batter and make gingerbread cookies for them. 😊

Honey should not mold and I have never seen that before. I have had honey in a bucket that was not air tight for many years and never got mold. I would suspect any honey that got mold is not real honey

Are the honeys you use tested for pesticides? Bees just go where ever flowers are. Just curious maybe I'm over paying I buy online from a place that states they do testing

While they are all labeled organic, it is only based on what they are mostly gathering nectar from. There is never any guarantee that some of the bees do not gather nectar from organic flowers.

Not exactly sure what you mean but it is not maple syrup unitless it is 100% pure. Some companies sell a syrup that is nothing more than artificially flavored corn syrup
