Fun fact : The difference between caramel and butterscotch is that caramel is made with white sugar and butterscotch with brown sugar. I prefer butterscotch too.

I tried it. This is a winner!! Yours is the second recipe I'm trying. The first from another KZbinr was a fail! Almost gave up not trying again. Had to throw it out. But this has restored my faith. Using the spoon to check if it's done helped me not to overcook it. We can't go by the colour because that depends on camera lighting, which is why my first one failed and turned bitter. This recipe is delicious!!! I'm having it with my sugar free ice cream. I was getting tired of my vanilla keto ice cream and this caramel sauce was like icing on the cake! Thanks for this!!!!!!

Hi love this so I know salt is a stabilizer, but is there a way that I could use just a portion of the salted butter and the rest in regular unsalted butter so it gets the salt and the stabilization but without the salty taste

Usually about a week. It’ll harden in the fridge but it’ll be fine adding to hot coffee.

Hi Joe, Yes, that should work! It won't harden at room temperature, but it will if you refrigerate after coating the apples.

I imagine it would w good but if you are going for low carbs apples are not the fruit to use. One medium apple without skin is 21 carbs.

Since it’s made with dairy, I wouldn’t store it at room temperature, but it’s fine at room temp for a few hours or possibly up to 1 day.

I think it tastes delicious the way it is. :) Palm sugar would make it no longer sugar-free, and not that different from traditional caramel in terms of sugar content.
