How wonderful to have all those jars. Pro tip - store them upside down if they don't have lids....otherwise they accumulate dust, flies, dead spiders etc. You still need to wash/sterilize, but it keeps that process a little easier.

The two people/channels that have taught me the most about canning have been Chelsea at Little Mountain Ranch and Rachel at That 1870s Homestead. I've gotten so much inspiration and canning confidence from watching those two over the years. Jill Winger (Old Fashioned On Purpose) also has several podcast episodes about canning. The Canning Q+A episode and the Botulism episode were particularly helpful for my understanding of safe canning practices.

That table next to the fridge I would personally use as a "fermenting" table, to hold all my fermented foods. Kombucha, ginger beer, sourdough, kimchi, sauerkraut, etc. :D

With canning i highly recommend starting with something like jams or applesauce to get the basics down before trying more intense stuff. I definitely understand being hesitant, but you'll get into a rhythm. You already do so many amazing things that intimidate many of us like they're nothing. I'm sure you'll get there when you're ready and you'll love it! Biggest note, a lot of people post videos where they "sterilize" their jars by running them under the faucet with hot water. Bad. Very bad! That and running them through the dishwasher and leaving them in the heat doesn't sterilize them. They need to be boiled for 10 minutes to be safe. However, if your canning time is longer than that 10 minutes they sterilize while processing. So for things like jams pre-sterilizing is needed because the processing time is 5 minutes. But water bath canning things like tomato sauce takes alot longer; anything in a pressure canner is longer than the 10 minutes as well so those sterilize as you go. Also, with a stove like that you'll need canners with flat bittoms. Some waterbath canners have the wavy buttoms and those will damage the stove. Learned that quickly and the hard way. Oops. Love your summer kitchen!! That is a goal for my place! There is so much you can do with that space. My ideas are not only all of the kitchen skills you can master but also a great space for drying herbs and craft type projects too.

Most newer pressure caners have a pressure release valve on top you open with a spoon to.let the steam out. So they don't blow up like old ones. Water bath canning is lower temperature so good for peachs and stuff like that not meat. It's just a big pot with water in it. If you can boil water you can do water bath canning. Don't forget to preheat the jars as well as hot and cold sudden changes in temperature is what causes problems like broken glass

Most people start out with a health fear of canning but when you get past the fear it can be addictive. Get yourself a good basic canning book they have easy step by step instructions that you can easily reference.

Try fermenting, just salt in water with veg. See Off Grid with Doug and Stacy. Super simple, lasts for months.

Thank you for your comment! Sometimes we get a little ahead of ourselves and forget to further explain things 🙈 we do have a second kitchen in our main house. Which we will be doing a video on soon (a few things left to unpack as we’re still moving into our new place) I guess what im trying to say is the reason we have a summer kitchen is 1.) more space for canning, cooking & baking 2.) it allows one to cook in the summer without heating the main living house up. This is how the property we bought came and we are super excited to explore all the intricate design work the previous owners decided on. @@LovinofftheLand for new viewers, they have no idea you bought a new property. Maybe a little recap at the beginning of each video stating "We're excited to share info about our new property". You start your video as if all viewers know where you are coming from. Many popular channels start out with a same special Intro, i.e., Hi - we're sailing this boat around the world", or "We bought a farm 2 yrs ago and are improving it". I think you get the idea. Jumping into a video with no background or context isn't helpful to viewers. I'm rooting for your channel because you guys are doing great work on Pender! Lucky you guys! Great place to live!
