I tried your recipe but replaced cornflour and baking soda with 1 egg white, a trick I learnt from a Hong-Kong friend to make the meat smooth and soft. The flavour was amazing!

Hi SnP! Not sure i can get salted fish in Austria... will check my Asia shop next week though. What do you think would be a proper substitute? I can get anchovies and sardines in oil (they're salted usually). Do you think that's a proper sub for it? I suppose i could add fish-sauce to the pork for more fragrance? Wikipedia is sort of vague on Cantonese salted fish (but i'm guessing it's herring). Thanks for advice when you have time!

Hello hello! If you can find salted fish, you can replace it with salted vegetables or dried squid. Maybe anchovies in oil will do too although we’ve never tried western version of anchovies before. Hehe. Happy cooking!

Hiya, I managed to find the right kind of salted fish at my local oriental store(i'm in Perth). It is typically Makeral that you are looking for. Ask the store manager and they should be able to find it for you

What’s the difference between dried salted fish and those preserved in oil? I only have the former so I’m wondering if it would be the same

Hihi. Salted fish preserved in oil is used in dishes that require steaming whereas dried salted fish is more frequently used in stir fried dishes etc. However if you wanna use dried salted fish for this dish, you can too but it may not turn out as fragrant. If you only can get hold of dried salted fish, we recommend that you fry the salted fish first in oil and then break them into small pieces before adding to the meat. Hope this helps.

Hem Joo Yeo my step mum used dried salted fish and it turns out fine. You have to rehydrate the fish by soaking it in water, this also removes some of the saltiness from the fish as the fish can be really really salty.......

Hi Snowball. You can use your usual way of steaming eg use a wok - filled with water. Let it boil then add this to the wok for steaming.

We use any large pot (stew pot) and use a tripod to lift it above the water level. If no tripod I use empty flat tuna cans to raise the dish above water level

I think you’re mixing up MSG and baking soda. MSG is the much dreaded ingredient - not baking soda.
