Made some last week to a different recipe and it came out all flat and sticky. After a bit of a snope I found out it's because the recipe called for water to be added (the enemy of dry, crisp toffee). Just tried your recipe and it has come out fantastic. A lovely treat for bonfire night.

In South Korea, this is the only candy that kids can make by themselves. We have a machine for this snack. If you put some coins into the machine, it gives you a small mount of sugar and there is a small heater, big spoon, baking soda and lollipop sticks. So every kids could make it easily in 5 minutes :) It reminds me of my childhood.

In Korea, it's been on of the most common street snack! but we flatten it down and then press a shake with a wire stick? then we carefully break them so that on the shape in the middle remains, don't know if you get the picture but it's really fun! and if you can get the shape without breaking, you get another on for free! you can type 'bbopki' or 'dagona if you want the picture :)

Oh dear..when i left it to the hard crack or 149c temp, it was too dark and tasted burnt. If i make this again i think ill take it off the heat before that stage. also has a weird bitter bicarb taste despite only using the exact measurements

its very similar to Korean sugar candy thing called Dalgona. Dalgona is made only with sugar and baking soda and laid out in a thin round blob and isn't as airy.

This Honeycomb is so good! I had lost my recipe that a carney man gave me in Massachusetts on the Boardwalk. I knew the ingredients but how much? Well, I had no clue as I hadn’t made it for a couple years. I just stumbled across this a couple days ago and made it earlier today and it was just awesome. Now I need to make some Vanilla Ice Cream and try to put the pieces of honeycomb in it after it has frozen when my maker calls for add-ins. I can’t wait. This would sure be a big hit for Christmas Bazaars! Thank you for all your wonderful recipes. They give me so many ideas 💡! I know how to bake and cook but when it comes to sending pics on Instagram, I’m helpless as a baker without a Kitchen aid mixer, 😂. Irish Jilli

I made iiiiiiiiit! It is sooo easy to make and it tastes delicious even more when dipped into any good quality milk chocolate! However, I really recommend to use a big deep pan when melting the sugar and the corn syrup because it's really going bing in volume when adding the bicarbonate of soda, whatch out! :)

maybe your thermometer is off you should place it in boiling water to see if it reads 100C that way you will know if its accurate

Oh my god that sound when you cracked it in half and it split so perfectly.....I need this right now! I last tried to make honeycomb about 3 years ago with my friend, which involved me dropping a knife into the mixture as I poured it into the tin and then pandemonium as we tried to get the knife out of the rapidly setting honeycomb...A lot of screaming and yelling lol. The end result was not like honeycomb, it didn't snap we were basically playing tug of war to try and break it. It was really stretchy and like tar in your mouth. Idk what the hell we did wrong but hopefully this time will be better! Going to make honeycomb ice cream whoop

So, just a couple of things, I used german golden syrup, it is much darker than the one you use. I don't know if that is the reason but the whole thing started burning before it reached 120C. It was giving off pufs of rancid smelling smoke and was foamin intensly. Anyway I added the soda, it turned a light colour, but most of the soda did not disolve, the mix didn't cool down fast enough and deflated. Now it is not airy, it is kind of bitter from the burnt sugat and salty form the soda. I'm trying honey next time.

I cup sugar 3tblpoons golden syrup stir bfore you put the heat on then heat to boiling point put 1 and a half teaspoons of bicarb stir like crazy it foams up then pour on baking sheet easy peasy

Just a tip I think should've been included. If you make this then make sure to have a kettle of boiling water ready to pour into the empty pan to clean it out. Otherwise you may as well chuck the pan in the bin.

You can always soak the pan in warm water later and it will still dissolve. After all, it's only sugar really.

she wrote liquid glucose or corn syrup as other options in the description. Honey is also used in other honeycomb recipes so I don't see why not, it may just taste a little different.

What did I do wrong? Followed your recipe and it cooled to a chewy toffee. The only thing I didn’t have was a thermometer. I’m thinking the temperature wasn’t right. I let it boil aggressively like yours. Any advise is welcome. I feel rather silly failing at this 😂

In Hungary, we use honey instead of golden/corn syrup, and it works perfectly! We call it "Turkish honey", and it was one of my favourite sweets during my childhood. It's still very popular at village fairs.

Jemma has said in the description box to use liquid glucose or corn syrup. However, I pulled up some other recipes online that uses honey. The amount of honey is reduced, since it is much thinner than golden syrup or corn syrup.

I made this recipe using pancake syrup...what a fail! I think that I stirred it too much after adding the baking soda, I added a bit of vanilla favoring, and then I put mini chocolate chips on my pan before pouring in the candy batter. It shrunk down. and it was slow at hardening so I cut it into strips and placed it in the freezer to totally cool and maybe crunch up. Mine didn't turn out airy and crunchy, but it is sooo good! After the initial crunch from being stored in the freezer, it become sticky like taffy in my mouth. Oh my this mistake turned out wonderful, can't stop eating. Next time I'm going to stick to the recipe to find out how it should have been. Thanks

The honeycomb candy is chopped (with a knife) into small nugget bits, and folded into rainbow sprill (multicolored sprinkles)-to make what's called Krunch Koate. KK is used to cover ice cream cones.

It becomes hit or miss without a thermometer. If it doesn't get to the right temperature or gets too hot, then it doesn't come out right. Too soft or too hard.

Russell Farrell caster sugar can be made by just grinding up regular sugar in a food processor since it is just superfine sugar. And I’m not sure about golden syrup but I’m pretty sure you can use honey instead. Hope that helped!

I live in the NW, and it's kept in the baking aisle with the corn syrup, molasses, etc. Look for Lyle's. Or just use light corn syrup. The Lyle's definitely tastes better, though!
