Oh this was exciting! There are very few things in H-Mart that intimidate and baffle me nowadays, wondering how to prepare or cook with them. Before I watched this I would have said that Gosari/Fernbrake would be one of those mysterious Far Eastern pantry ingredients that without KZbin tutorials to guide me would leave me totally perplexed, having absolutely NO IDEA how to cook it or what it's actually for. I LOVE learning how to confidently incorporate incredibly healthy and unusual vegetables into my cooking. Soon, no corner of H-Mart will mystify and challenge me! Rarrrhh!! Thank you so much for this video, once again. You're brilliant, I'm so glad you started this channel.

Oh wow. I wash my dry kosari then soak for one hour. Then pressure cook it in fresh water maybe 30 to 45 mins. It's ready for cooking. I also keep a lot of the nice tea water. I use the water with beef dashida and beef soup.

Hi Nicholas! Yes, cooking in the pressure cooker is a good way to speed things up, if one doesn’t have the time to slowly soak the dried GoSaRi in water. As for the liquid from the long boil (30+ minutes), I don’t believe it is recommended to consume. My family always discards the boiled liquid. BUT the liquid from braising (after the long boil and stir fry) is delicious, indeed, as a soup base or just to have with rice (as shown in the recipe).

I'm glad you stress not drinking the colored soaking liquid.Yukgaejang what's the very first Korean dish I learned how to make over 25 years ago. My Korean friends would tease me that gosari most poisonous. I guess they wanted me to take it seriously about soaking and rinsing. Thank you for sharing. It's one of my favorite Korean ingredients

Helen. OMG.. I've been wanting to know what Bracken taste like. I was going to order the Haneul Nongga dried brand from the Weee app but I didn't because I had no idea how to make it. I'm so happy for this video. You just made my heart smile 😊

Bibigo and Korea Foods do generally pretty good kimchi. Even better, find Helen's own kimchi tutorial video on this channel-- it's foolproof. I make two Lakeland jars at a time which is perfect for a couple or small family. It keeps in the fridge for a couple of months, easily. I follow only this recipe when I make kimchi and it's the only one that's ensured very good results. My only issue is that mine always goes sour and fizzy far too soon. I have no idea what I'm doing wrong, but it's all about practice and experimenting/tweaking method or ingredients. Good luck, hope you have fun!

@@ModernPepper This is great advice-- my local H Mart has always sold out of their in-house kimchi on the days I go so unless I plan on making some myself, I go for the aforementioned brands. They can be a little hit and miss in terms of quality of batches sometimes which is always a concern but beggars can't be choosers, ha!

Whenever I've had bibimbap I thought those were a type of funghi. I will pay more attention to the flavor the next time I order. Hmmm, seems like a 30 minute drive to the nearest Korean market is in order. Kukje here I come.

They do normally have a mushroom like flavor to them, but if you add the beef bouillon, they taste a lot like meat.

is it ok to soak it for 12 hours in the fridge instead of on the counter? I live in a tropical country and I'm afraid that it will amass bacteria if I leave it on the counter.
