Royal Truffles recipe (1.5 servings):
300 g Dark chocolate 70%
200 ml Cream 33-38% fat
100 g Butter 82% fat
60 g Glucose
20 ml Cogniac/Rum/Liquer (optional)
200 g Dried Figs
200 g French dried plums+erythritol 1 tablespoon
150 g Walnuts
Soak figs in hot water and leave to swell.
Soak French plum in hot water and leave to swell.
In each fig, make a pocket with a knife and place the toasted chopped walnuts inside.
Mash prunes into a thick mass through a meat grinder or immersion blender. Then make a ganache (see video) and keep this one until it solidifies in the cold. Dip the figs in the ganache.
Roll 3 cm balls from the mass of prunes (like Raffaello) and roll in a ganache. Put in the freezer until it completely solidified. Roll the truffles in tempered chocolate. You can make the decor according to your wishes!
