Sweet and Sour Chicken by John Quilter aka Food Busker Ingredients: Meat and marinade : 2 boneless skinless chicken breast 1 tbsp fish sauce 2 tbsp soy sauce drizzle of sesame oil Sauce: 1 large yellow onion 1 red bell pepper 1 yellow bell pepper 1 green bell pepper (replace with orange if you don't like green) 1 medium fresh pineapple 2 tbsp tomato paste 1/4 cup apple cider vinegar ?? honey ?? corn starch mixed with ?? water Batter: 60 grams rice flour 130 g fine milled flour like dumpling flour or typo 00 (all purpose will work if you don't have) 4 tsp baking powder 230 ml water Method: 1. Cut chicken into bite sized chunks 2. Marinade chicken in the soy, fish sauce and sesame oil 3. Place on a rack in a baking sheet and place in the fridge to marinate and dry out (several hours) 4. Cut onion and peppers into 1 inch chunks 5. Peel pineapple and slice into 1/2 inch by 1 inch chunks, discard core 6. Heat a wok or high sided heavy bottom pan to medium high 7. Add a tablespoon of high heat neutral oil to the pan 8. Saute onions until starting to go translucent and getting a touch of color on the edges 9. Add in peppers and 2 tbsp of tomato paste, cook out for at least 2 minutes 10. Add in pineapple and cook until warmed through 11. Deglaze the pan with the apple cider vinegar 12. Stir in the honey stir and allow to cook for 4 minutes. 13. Make the corn starch slurry and whisk into the sauce and allow to cook until thickened. 14. Mix the flours and baking powder in a large mixing bowl 15. Gradually whisk in 230 ml of water until you achieve a thick smooth batter 16. Assuming your chicken has dried sufficiently in the fridge, dredge your chicken in the batter and fry in batches without crowding the pan for 3-4 minutes in 170C/338F frying oil of your choice. 17. Place on a rack or paper towel lined plate to drain. 18. Toss chicken in the sauce and plate up with some white rice. 19. Top with toasted sesame seeds and enjoy.

Same here. My first love in Chinese cuisine was Sweet Sour Chicken. But then at the buffet, I always stuffed my plate with spring rolls, fried wontons, sesame prawn toast, prawn crackers, crispy duck pancakes and lots of crispy seaweed.

@@xuedalong Oh deary me! There was a Chinese restaurant down my high-street in Golders Green and this is what they served. They were all friendly Chinese staff and owners. The buffet went bankrupt in the end and I was so sad. It was like a girlfriend breaking up with me.

Inspiring dish, Chef! I like to deep fry in my wok because it is a lot less messy, so I'd do the chicken first, filter the oil, then cook the veg in the wok as you have done and pop the chicken back into the sauce.

this is a good recipe compare to my country sweet sour recipe which is moderate ingredients. We use chillies sauce, tomato sauce, seafood sauce, bird eyes, garlic, onion and pineapple.

Great video John but, why no carbon steel wok, I'm 😲 I'd love to see a video of a takeaway chowmein vs a at home chowmein and how to get that umani flavour without a 11kw gas supply. I've been trying for year's and have the recipes from the local Chinese etc, and KZbin channel's. I use the same brand of ingredients etc but can never get that umani flavour. And yes I've tried msg. I'm convinced it is to do with the heat.

I prefer it to be way more sour than sweet. During covid a restaurant opened up as a takeaway. You can taste the difference.

Oh no! My American Chinese sweet & sour chicken sauce was definitely ketchup based, and no chunks (yes that was an Oxford comma). When I moved from upstate NY to Boston the sweet and sour had pineapple chunks...ruined it (for me). But I’ve also been to China (Shanghai) and Hong Kong. There is no sweet & sour chicken. And Chinese broccoli is so much better than the filler so many takeaways use.

In the US, the stores sell only these gigantic chicken breasts. Twice the size or more of what you used. They are usually rubbery or tough.

Hi, just read your comment. I live in the US, Ny. I feel I need to help you along when it comes to cooking chicken for dishes. The Reason you feel your chicken is Rubbery, isn't because it comes in big pieces, its because you need to know how to Cut it properly in order to come out Tender. All chicken comes in big pieces no matter where you go on the world, but the way you slice it makes All the Difference in your dish. Now, when you get your big chicken breast, lay it down and at the narrowest end, cut it at about a 45' angle in very Thin slices. Remember to Angle that blade and make sure it's sharp too. Just keep it angled and thin. You're cutting against the muscle which creates immediate tenderizing. When cooking any Asian dishes, take those thin slices and put in a bowl and add about a teaspoonful of Cornstarch and a tablespoon of Soy sauce and 2 tablespoon of water and mix. Same goes for Beef. Cut beef same way as chicken and marinate the same. Put aside for 15 minutes while you cut up your vegetables or whatever. You will be Extremely pleased at your, Silky, Soft , Marinated chicken or Beef. I promise you will be very pleased 😁👍❤❤ This dish is chunky, but any other dish use sliced thin strips like I've described above
