I make this all the time, and don’t use ANY sugar. You don’t need to as the sweet potato is sweet enough after roasting. Plus, there is sugar in the topping.

Yams and sweet potatoes are entirely different plants! In the US, we usually have easy access to sweet potatoes in most supermarkets & have to shop at Caribbean or Asian stores to find yams. Most grocers carry the dark orange and yellowish varieties, which are both sweet potato varieties. Yams are extremely starchy and are not the same shape or texture as sweet potatoes. Grocery stores often mislabel sweet potatoes as yams; I'm not sure why they won't correct themselves.

I love Thanksgiving and all of the casseroles. My recipe has to be gluten free because of nasty allergies. Instead of just yams, I add layers of peaches from our tree with homemade cranberry sauce. Topping is gluten free oatmeal with pecans, cinnamon and more Truvia, plus dots of butter. It is almost a dessert! ❤

Can you explain about freezing before serving? Do you just thaw and reheat? Does freezing change the texture of the pecans? I’m always worried about the texture changing so afraid to prepare anything more than a couple days before Thanksgiving.

Yes. I thaw and reheat. Sometimes it might change the texture but most of the time it’s been good. You can always freeze and add topping the day of if you are concerned. Thank you for the question and for watching.
