There is an old Mythbusters episode where they show that double dipping is actually not that bad and unhygienic... But dunno about tripple dipping, lol.

is baking it a healthier alternative? and if so, how is the recipe altered? Will it also have the same taste?
@IneffableParadox7 жыл бұрын
Depends on what you consider "healthier". But I find it less of a hassle. To make the chips as crispy as the fried ones, preheat the oven at about 220°C (425°F). Cut the sweet potatoes into the same-sized fries John did, then toss them in a bowl or resealable bag. Add a good sprinkle of corn starch over the fries and toss them thoroughly. Make sure there are no lumps of powder left. Add a bit of olive oil (just enough to coat the chips, about a tablespoon) or coconut oil (for a sweeter, almost maple-like flavour), toss to coat the fries and season with sea salt, black pepper and whatever spices you decide to use. I'd recommend a mix of cayenne pepper, smoked paprika and cinnamon, or cumin, chili powder and garlic powder. Toss the chips evenly to coat with the spices and place them in a single layer over a hot non-stick baking tray (or a lined tray that has been heating up in the oven with a little more oil) to bake. Do not overcrowd the tray, leave a little space between the pieces so the hot air can hit them from the sides. I sometimes add to the tray a sprig of rosemary and a couple of cloves so they infuse the chips as they bake. Bake for 15 minutes, then shake the tray to flip the fries (if they stick, gently pry them out with a spatula). Leave for another 10 minutes or until they're slightly browned and puffed up, allow them to cool slightly (about 5 minutes) and serve with another sprinkle of sea salt.

Why are my fries watery after baking? I added cornstarch.
@dumbo7016 жыл бұрын
This is a bad recipe if you want them crisp, try boiling them until they start to get soft, no longer or they will fall apart. Then pat them dry and throw em in the freezer for 3 hours or over night, then fry at 120 until they start to get some color, take em out, dip in cold cornstarch water and fry again. A bit of a process but worth it if you love crispy sweet potato fries!
