hi, thanks for sharing the recipe. can i check, the baking temperature at 130c, with fan or without fan? currently i at Guangzhou now, the humidity is about 70% now, and i dont have the dehumidifier at home. can i use fan to dry the Macaron before baking, or can i use hair dryer?

Nice to know you.Many questions need to ask you for help before baking the macarons. 1) May I know what is the sizes of the nozzles for the macaron paste and the chocolate ganache which u are using ? 2) Can I use the electric hand -mixer to whip the egg whites ? 3) Can I bake the macaron at 160degree celsius . 4) Can I make my parchment paper for the macarons, and may I know the dimensions for the 2 circles Or is better to order online.( is the size standard ) 5) Very Sorry ! One more question from me, as for this recipe, how many macaron can you bake ?

Hi Celine, 1) The size of nozzles is 1cm (both). 2) Yes, you can. 3) Yes you can, there's some flexibility, after all you know your oven more.:) But if you are not sure about it, you can follow the instructions and steps and baking temperature to make it at first time, once baked, the results will let you know so many informations, like the temperature is too high or low , the baking time is perfect or not enough. Then you adjust it. Thank you vm Cassandre. I successfully made this following your recipe and instructions. But i had to use a hand mixer.. not as skillful as you on beating the eggs. My first time making my favourite macaron. Very grateful for your tutorial and love the stories at the end of the video 😊.

Why preheat oven to 160 but bake at 130? Do I wait the oven drop down to 130 before putting it to bake?

Hi, we need a higher baking temperature to shape the surface at the beginning and help to developing the feet. But if the baking temperature remains high, feet may be overdeveloped. So preheat high bake low will be good idea. 😊
