"Swimming Rama" is a dish that is becoming hard to find in Thailand, but is still served in many Thai restaurants overseas. Started by Chinese immigrants in Bangkok, swimming rama is made up of a bed of blanched morning glory or water spinach, topped with tender slices of pork or chicken (or tofu), with a peanut sauce poured on top. In Thailand this is often served as a "single-dish meal," which means that all the good stuff gets poured over rice!
I have to admit that I'm making a bit of a luxurious version here (because I can!) with lots of coconut milk, herbs, and peanuts, so it's extra rich. If you get this on the streets of Thailand, the gravy may be diluted with stock, and then thickened with starch.
You can also make this vegetarian friendly by omitting the meat altogether or substituting tofu or mushrooms. The sauce can be made far in advance and kept in the fridge for days, so this really can be a quick weeknight meal!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. I made this tonight and it was SO DELICIOUS. I tried this dish at a Thai restaurant in NYC and your recipe tastes even better. Note: when I tried the sauce during cooking, I thought it was wayyy too flavorful and that I had added too much tamarind and curry paste. Not to worry, the flavors were perfect when I had it with plain steamed rice and blanched greens and protein. I realize now it is supposed to be super flavorful.

Brings back memories of my childhood in Thailand....especially the morning school sweet black beans in sweet broth. I have forgotten about that for 30 years already until just now. Thailand will forever be my real home....

In lots of traditional Asian cultures: Chinese, Thai, Korean, Vietnamese, and Japanese words that translate cyan are used. 靑 is the traditional character used in Vietnamese Chu Nom, Japanese Kanji, Korean Hanja, and classical Chinese. As western cultures have interacted with Asian societies ideas such as colour schemes were brought into these societies. This is still a common feature to this day. Like Russian Society has more basic colour categories than western languages (light blue & dark blue are differentiated like pink & red, or orange & brown). Some primitive societies like recently contacted tribes have even more limited colour schemes like black, white, and red. To specify a colour they will simply compare it to something. Like "leaf coloured" or "ocean water".

I had Swimming Rama at a restaurant in Tacoma, Washington way back in 1990 and I've been looking for it ever since. If I recall correctly, they made it with broccoli instead of spinach, and because I was a vegetarian at the time, I ordered it with tofu. It was so good! The beauty of KZbin has recently reunited me with great food I'd always figured I'd have to fly to Thailand or indenture myself at a restaurant to learn how to make for myself.

This was amazing! We were always intimidated by the sauce, but your instructions & the break down of ingredients helped so much! It turns out our tamarind sauce/ paste was the kind from India, not Thailand. So, thank you for adding that link in your recipe list for a further education. My partner and I made this last night; Vern’s not a coconut milk fan -BUT- he went back for seconds and thirds! He’s obsessed with pork but loves the sauce even more. Pai, it was very hard to get him to try this. Your recipe is magical. 🌈

The funniest thing about this dish is despite being born and raised I Thailand, I had never heard of this dish until I came to Canada and started working at a Thai restaurant. They changed up the name a little bit but it was still more or less Long Song. My boss was so surprised I hadn't had it before and so was I. They make it a little different from this though. I think they used steamed Gai lan. And the sauce tasted more like Rad Nha sauce but more peanutty. Now I need to make this recipe because curry ❤

KT breathe Stupid story about me, being born and raised here in Thailand, knew and ate this dish before, more than a decade ago when my American friend told me about his favorite Thai dish which is steamed chicken and vegetables over rice, topping with peanut sauce. I just couldn't recognize it so I told my friend, "I don't think there is a dish like that in Thailand". So stupid! It's not a typical Thai dish and it's quite rare in Thailand these days.

Haven’t been able to get this since we left the US, so great to find an awesome and authentic recipe, just like the restaurant used to make. I used seitan for the protein component, reduced the tamarind quite a bit and used fake sugar to minimise the carbs. So basically Keto. And it tasted great. 100% endorsed.

I’ve never had this in my almost 30 years of existence in Thailand. Will give it a try soon. PS Green and blue are sort of the same colour in many cultures. Think Of it this way, since it’s a matter of adding yellow to blue to make green, the line where blue become green gets a little blurry at times. Different cultures also look at the same colour differently. That’s why a blue print is a “green” print in Thai. Hope that didn’t make it even more confusing.

In traditional depiction in India, Rama is bluish-green. In fact, in Tamil, the colour is called Rama-green (Ramar-pachai)

Thin soy sauce (I found brands from Thailand sold in Asian grocery stores) tastes very similar to fish sauce and we use it in everything :) Gardein makes frozen vegan pork bites that tastes better than the pigs and already pre-tendered/coated with starch. I love peanuts and curry, so I can’t wait to make this!

Using light soy sauce and add more salt, these could replace the fish sauce. Moreover, you should make vegan red curry too coz normal red curry contains of shrimp paste.

I'll try this one. When velveting, I'm used to blanch meat in hot oil (short deep-fry or shallow-fry in skillet), since I always had the feeling that blanching in hot water results in loss of flavour. Like the water washes away the marinade. Good opportunity to try the healthier hot water dunk this time.

Swimming Rama is one of my favourite dishes at a local thai place (its fast food Thai and its wonderful) as well as something called Crying Tiger (I wonder if that is an actual Thai Dish or not. Its made with beef, cilantro, green onion, romaine lettuce, carrot, lime chili dressing & crispy rice crumbs.

Yes crying tiger is an actual thai dish. In Thailand, it more like a grilled beef serve with Nam jim jaew dipping source. :)

More than a decade ago, my American friend told me about his favorite Thai dish. He described it as steamed chicken and vegetables over rice, topping with peanut sauce. That time I couldn't recognize any Thai dish like that and also I didn't know exactly what "peanut sauce" is, so I told my friend, "I don't think there is a dish like that in Thailand". So stupid of me, lol. Actually I knew this swimming rama dish, I ate it before, but it's just quite rare in Thailand these days.

In Filipino, water spinach is called KANG KONG and due to our proximity to Thailand, I was not surprised how similar it sounded to the Thai word for it. That's all.

I love finding genuine, authentic ethnic food channels!!! I try to be culturally varied in my dishes. Also, my stores do not have red curry mix- do you have a recipe for this? Personally, I'd cook the pork straight in with the curry because it'll give the curry a little bit of a 'meaty' flavour.
