Reminiscing our nostalgic past, we cooked Manok sa Kawayan during our Girls Scout camping eons ago when we were in 6th Grade under the supervision of our teacher, Ms. Alvendia. We all made a bonfire, then we all prepared the marinated chicken in 7-up, rubbed the whole chicken with pepper, chicken bouillon powder and turmeric, then stuffed it with rice in sesame oil, lemon grass, onions, garlic and ginger, then we wrapped the chicken in banana leaf, put it inside the bamboo hollow and slowly grilled it. That was the happiest camping experience ever. Core memory unlocked! 👍👍

In the other side of the Visayas, we call the chicken cooked in the fresh bamboo tube 'binakol'. Ate's commercialized recipe & updated & probably improved method of cooking looks good! We didn't had the luxury of the aluminum wrapper which I think preserves more of the chicken juices! But then the bamboo tubes were not split until the chicken were done! & flavoring is always regional! Anyhow, it's nice of you to have experienced & appreciated 'binakol'! Godspeed!
