Reminiscing our nostalgic past, we cooked Manok sa Kawayan during our Girls Scout camping eons ago when we were in 6th Grade under the supervision of our teacher, Ms. Alvendia. We all made a bonfire, then we all prepared the marinated chicken in 7-up, rubbed the whole chicken with pepper, chicken bouillon powder and turmeric, then stuffed it with rice in sesame oil, lemon grass, onions, garlic and ginger, then we wrapped the chicken in banana leaf, put it inside the bamboo hollow and slowly grilled it. That was the happiest camping experience ever. Core memory unlocked! 👍👍

THANK YOU, KURT for visiting San Remigio, Cebu as well as trying out everything with utmost respect and appreciation of our food and culture. We really appreciate that you decided not go to the usual posh places but instead you went for the very basic, simple and the most relatable to the Filipino masses. As the saying goes, “you often find beauty in simplicity!” Your avid twin viewers from Illinois, Josephine and Jocelyn

We sincerely love the powerful message of Mayor Alfonso Pestolante. It’s true, when individuals worked together and act in unison, their combined efforts can achieve more, leading to a stronger collective impact, and a sense of shared purpose in a community. For a community to truly thrive and make progress, it requires active participation and engagement from not just the designated leaders, but also from the constituents and every member of the community, as each individual has a role to play in driving positive change. Such an outstanding and exceptional leader! MABUHAY ANG SAN REMIGIO, CEBU!

Hi, KURT! The connection between Filipino traditional dishes and cultural heritage is deeply rooted. Culinary techniques are passed down through generations, preserving not only the flavors but also the stories and traditions associated with them. Each dish tells a tale of history, migration, and adaptation, reflecting the unique experiences of Cebuanos. Thank you, Kurt for sharing our culture and showing the world what makes our country so special! Your avid twin viewers from Illinois, Josephine and Jocelyn

HI, KURT! Our local cuisine is a reflection of who we are as Filipinos and it’s something that we cherish greatly with pride. Kurt, we are very grateful for the window you've opened to the world, unveiling Cebu’s hidden gems and sharing our traditional dishes to showcase the beauty and depth of the Philippines’ culinary heritage. Our hearts are filled with so much joy for showing so much love for our language and culture. TAOS-PUSO KAMING NAGPAPASALAMAT. Looking forward to seeing your Baguio adventure. Aabangan namin ang susunod na kabanata! 😊😊 Your avid twin viewers from Illinois, Josephine and Jocelyn

Chicken cooked inside bamboo hollows becomes flavorful and succulent because it retains the moisture and the nutrients of the meat. The fibers and fragrance of bamboo intensifies the meat's aromatic and distinctive flavor. This unique food preparation allows the herbs and spices to completely dissolve into the juices of chicken that make it tastier and healthier than any other form of chicken you would have ever had. Looking forward to seeing more of your Cebu food adventure! Your avid twin viewers from Illinois, Josephine and Jocelyn

In the other side of the Visayas, we call the chicken cooked in the fresh bamboo tube 'binakol'. Ate's commercialized recipe & updated & probably improved method of cooking looks good! We didn't had the luxury of the aluminum wrapper which I think preserves more of the chicken juices! But then the bamboo tubes were not split until the chicken were done! & flavoring is always regional! Anyhow, it's nice of you to have experienced & appreciated 'binakol'! Godspeed!
