Actually, it's a common trick here in Asia that when you sell low quality beef to keep the price point down in vendors like this, you play it up on having a nice and unique taste from the spice which is presumably cheaper. The beef by itself won't taste as good as high-end artisan steakhouses' whose selling point is mostly the quality and care they put down for themeat. The selling point is the taste of the asian spice they use which has quite different palate than European or American cooking.

i'm Taiwanese:) first of all,we dont eat cat meat or dog meat, or even rat meat, and it's really street food,like in night market, you can have it for more cheaper prices, around 200NT may have a large OZ of steak, we have cheap food because of our selary is common cheap, too. but we still enjoy our street food😀 sorry for my english is bed, i usually take my foreign friends to night market, they all pretty enjoy it.

You won't get sick eating raw beef as long as the surface is cooked. Beef is different than pork and chicken where parasites don't live inside the meat. However, the surface often becomes contaminated from the butchering and filet and thus it needs to be seared. This is why it's ok to eat rare steak and not rare porkchop or chicken.

Yes burgers aren't meant to be eaten raw for the reason I mentioned above. When meat is ground, all the contaminants on the surface of the meat is blended inside so just cooking out outer surface of a hamburger patty no longer does the trick to kill all pathogens like searing a steak does.

I grew up in Taiwan and I have eaten at all the best steakhouses here in America. For you who's never been to Taiwan keep in mind it's "street food" and that meal only costs $7 USD... which is 1/10th the price of a top steakhouse for just the steak. Trust me, I'll take this $7 piece any day of the week.

The way the water bubbled up on the steel top seemed to me to be at about a steady 370˚ especially when the meat turned color that fast. The Grill Top must have a steady pin point flame on it to keep it so steady at that temp without completely searing the meat. NICE
