Master Sushi Chef Hiroyuki Terada expands the boundaries of skills and brings to you our Tamago Maki, which is a roll made with egg instead of seaweed and soy paper. The last time he did this was over 25 years ago when he was in Japan so this is was a total treat to see.
The most difficult part of this recipe is making the egg thin enough to roll and of course, rolling it into a sushi roll with rice, shrimp and avocado.

About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZbin.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

Mr. Terada's always quick. Inexperienced chef would spend 3 times more to make it. He also knows he has to do it gentle & soft (not hard & quick) when completing the roll. The sharp knife is also a contribution. If you make it soft, it easily collapses. Sharp cut is required for the best air-contained rolls. Awesome job.

I am addicted to these videos. I just found you guys a few hours ago. I've never even tried sushi, but hiro makes it look so appetizing with the presentations. hopefully one day I will visit you guys, and have Hiros special of the day. keep it up, do what you love.

Another great roll Hiro! I live in Argentina and here one of the most popular rolls is made out of cream cheese, avocado, palm heart, salmon then wrapped in tamago just like this one and topped with deep fried sweet potato and passion fruit sauce. I'd love to see you create it. Look it up! We call it placer real (royal pleasure).

At first I did not read the description and the egg reminded me to the hungarian "palacsinta" but that gave me an idea to try to make a roll with palacsinta. :) Thanks for making this video and it is a great video as always.

This looks absolutely fantastic! Unfortunately, I have not commented in a long time, as I started to study at the university, and had little spare time. It's awesome how this channel has evolved, and I'll be sure to tune in as often as I can, because you're still my favorite channel of your kind out there. Hiro my compliments for all the amazing sushi you make, all the way from the Netherlands! After having seen almost all the video's and also the lasagna sushi from a couple days ago, i really would love to see you make a sushi pyramid! Maybe 4 or 5 layers and each layer being a different roll, the rolls you like most from bottom to top! Much appreciation from the Netherlands and keep up these great sushi video's, take care!

Hiro I think you should make something with blini. It's like a Russian pancake and they are very good. Instead of seaweed you can use the blini. They are the best when cooked at home and they are pretty easy to make... You can search them up and in some stores they sell them.

I realise Hiro didnt use the cling ramp before slicing it up as he usually does with other makis. May I ask why?

To check for the perfect avocado pull off the stem and look at the coloring: Brown= Overripe Green= Ripe Stem Hard To Remove/Hard Avocado Body= Not Ripe

Damn, this looks good. And I've never been interested in sushi at all. Love the presentation and aesthetics, but I just don't do seafood or seaweed. *shrugs* (except for OCCASIONAL shrimp) So, this would be awesome for me.
