not with all the salt, sugar and oil in modern Japanese food. The healthy japanese diet is the one with tons of seafood, tofu, vegetables and fermented product, mostly boiled, grilled or steamed, not the one with fried food (everything that ends with -age) and sugary sauce/marinate. If you can't eat bland grilled fish with a little bit of salt and grated daikon, steamed tofu, braised vegetables, and natto, then you haven't been eating the healthy part of Japanese cuisine.

Thanks for the very clear cooking instructions. I am a bit of a beginner cook, I just started making lunches for my parents every day as I’m physically disabled and stuck at home all the time. I am making Onigiri today. Along with Garlic Edamame, and a Strawberry Milk Jelly for dessert. and decided to make this as well now! I will post if it goes well later 😄 EDIT: I was able to successfully make them!! My first time and I was able to make two successfully 😄😄 I may lessen the sugar in mine from now on but honestly I’m so dang happy it worked. Thanks for such good instructions!!

This is the first time I've actually liked an omlette that isn't 70% cheese! Thank you so much for your instructions on how to cook with a round pan! My first 2 pours went poorly but my final pour went perfectly! Also for anyone wondering how it tasted using substitutes: I didn't have dachi powder or mirin so I substituted chicken stock powder from a ramen packet for the dachi and balsamic vinegar for the mirin and it was still great! Not as good as the actual recipe I'm sure but still great!

I think it would become better if we use Hot Sauce to Dip the pieces in there and eat. Spicy Omelette is always the best one for me!

My son and I are addicted to tamagoyaki. I have never been good at rolling the egg. My method is to pour egg in the whole pan, and flip it in half. I pour egg on the empty side, and keep flipping until all the egg is used. It looks like an American omelette, just layered and more delicious.

I have both round (Teflon) and square (iron) but smaller pans than what is shown. I have used both and either seems to work just fine. I loooove tamagoyaki.

Thanks very much for the video. I always order tamago when I eat Japanese and I was surprised by how easy it was to make. I didn't have sake but used all the other ingredients, also added a dash of cream. I'll try it with a little less sugar next time. It was great with wasabi and soy sauce.

so i tried this out and i didn’t have the dashi or mirin so i skipped out on the dashi but i did find out that apple cider vinegar also works for mirin and it tasted pretty good. i forgot to oil my pan and wasn’t able to make it look pretty😅 but overall i really enjoyed the food, thank you!

an easier way is to use a smaller pan and not fold the edges but place half the pan omelet on itself then add more egg to exposed pan and repeat but flip sid that is already cooking. lightly sprinkle sesame seeds on each new layer raw egg. adding sesame oil to egg helps. when finished grate fresh ginger into soy sauce to dip. japanese person taught me this.

Thank you, I managed to get it wright 🎉😂, u need to be patient and let it cook before you flip or it will end up scrambled. I cheated and used a lid for a tiny bit which causes the egg to lift and fluff 😅
