You really need to try injecting the masala into the turkey using a meat injector and marinating overnight. The results especially in the breast meat is phenomenal. I'm from Houston, TX and deep fried Cajun seasoned turkeys have been all the rage for years. I have created a fusion by injecting and rubbing with tandoori masala instead of Cajun seasoning and the results have been amazing. My guests can never get enough and I have gotten many requests to prepare turkeys for others during the holidays

I did marinate the turkey legs overnight and have mentioned it in the video. With this marinade the turkey legs turn out amazing every single time. I am not a fan of breast meat (turkey or chicken) so I generally avoid it. Scoring the legs and applying marinade allows it to absorb all of the tandoori flavor. Thank you for your suggestion (meat injector). I will try it out for my other recipes.
