Mix 2 eggs, 4 egg yolks and 1 cup white granulated sugar with a whisk for 3-4 minutes. Pour mixture into stainless steel saucepan and whisk in 2/3 cup freshly squeezed lemon juice. Stir over medium heat with a rubber spatula for 3-4 minutes until it thickens. Take off the heat and add 1/2 cup unsalted butter and 1 teaspoon vanilla extract. Optional: add lemon zest. Strain the lemon curd with a fine sieve. Allow to cool and transfer to sealed glass jars. Can be stored in the fridge for up to 2 weeks.

THis looks a lot simpler than another one I just tried that says I must use a double boiler! It took so long to thicken and it didn't even thicken enough. I'm gonna try your method and recipe! So glad to know I can just make it on direct heat.

I made a half recipe up with this and instead of sugar I used Xylo sweetener, which I blended up in the blender like a powdered sugar so that it would dissolve real easily. I also used a metal bowl that fit right inside of my Kettle with boiling water in the bottom of the kettle not touching the bowl so as not to have lumps. I think because of the Xylo I had to cook it about three times longer to get it thick. I also added just a little more butter 🧈😋. You really have to taste you in the a.m. to make sure it's sweet enough with the Xylo as I was very cautious and didn't put the full half amount at first and of course it depends on how sour your lemons are too. Thank you Tatiana for your wonderful inspiration and someday I'll try making the cheesecake as well using Xylo sweetener. 😊

So she said that she doesn’t like the texture of lemon zest but what I learned is that you can add the lemon zest and leave it to sit while you stir in the butter and then you strain it to get the lemon zest and it becomes beautiful and still smooth, but then it has that extra pop of lemony Flavor 😊

I absolutely love lemon ... always tried finding a good Lemon Curd to stick to... I have tried so many and just was not impressed... This video popped up and decided to make it since it was a recipe that didn’t use Lemon Zest... Every Lemon Curd recipe that I made had Lemon Zest in it... This Lemon Curd is my favorite now hands down! It has that nice creamy texture not like a gel and it has the right amount of Lemon taste and sweetness... the only change I made was using a Keto friendly granulated sugar! Definitely give this a try .. I absolutely love it!

Made this recipe 2x. I’m planning on using this to fill a lemon ricotta cake. The first time I used a stainless steel pot and a silicone spatula. Tasted delish but had a strong eggy aftertaste. Second batch I used a glass bowl and did the double boiler method. Also cooked it a bit longer. It again tastes great but had a slight eggy aftertaste again. This is after using a ton of extract (2 tbsp vanilla and lemon). Next time I’ll try to follow a different recipe with less eggs.

Hi! I'm sorry the recipe didn't work out well for you. It's KEY to whisk the eggs and sugar together until the mixture ribbons. This will help combat the flavor the eggs. Also, make sure to use freshly squeezed lemon juice as this will further help with the flavor.

Awesome! I'm soo happy you loved the recipe! You make an orange version, too. I would add a little orange zest to the sugar and blend it together for extra orange flavor. Since orange juice isn't as acidic as lemon juice, I recommend adding a few tablespoons of lemon juice, too.

Hi! I've never tried making this recipe with syrup, but you would need the same amount. Since agave is less sweet than sugar, the curd won't be as sweet.

hi I was wondering if I can find or know the smaller amount of the ingredients because when I make macarons I only make up to 5-10 full macarons and I don't want to be left with a lot of curd since I may not use it

Hi! Yes, you can make less of this recipe! My website has a little feature on the recipe card that will adjust the ingredients for you, too! :) Here's what you'll need for half the recipe: 1/3 cup freshly-squeezed lemon juice 1 eggs 2 egg yolks 0.5 cup white granulated sugar 0.25 cup unsalted butter 0.5 tsp vanilla extract

ThankS again Tatyana for thiS very tasty recipe!!!👍I juSt made it a few minutes ago and it tastes 10/10!!!👍I used 3 whole eggs/3 egg yolks as I had wanted a very creamy texture to it!!!👍I only used 2 lemons alonG with Realmon lemon juice as I had wanted to see how they would perform together and YeSss they did very well aS I didn't want an overpowerinG lemon flavor!!!👍I also added the rinDs of the 2 lemonS and a lil bit of cornstarch to thicken thiS up for some of my recipes!!!👍I added vanilla extract at the end of makinG it...but found that I preferred the curd without so in de winter when I make it again...I won't add it!!!👍Have a great week YounG One!!!✌🙏😇🌹🍋🍋🍋🌹☕☕☕

I always look for stuff that has the simple low ingredient count to be good. at 5 ingredients i’m just going going to try yours instead of trawling all recipes chef john which i’ve seen before or others. gorgeous hair btw. Ill check out your channel next time i’m looking for more dessert ideas for my son. cake in the oven now so this will be worth making and for french toast pancakes or whatever else later.

You'll need 2 whole eggs and 4 egg yolks. Using all whole eggs will not work unfortunately, you need just the yolks :)

@@pnattmbtc6706 Yes, you can absolutely store it in the refrigerator, just keep it covered. You can use it for making macarons, or just add the whites to an omelette :)

That's a great question! I have never tried freezing egg yolks so I'm not 100% how that would work. I think the lemon curd would be totally fine to freeze though

Hi! You want to use raw eggs to start the recipe. They will cook as you heat the lemon curd

Wait I mess up, I don’t have lemon curd , I thought I was making it . I use honey, lemon juice, butter, whole eggs warm up on stove until it becomes creamy but something went wrong to much butter I made greasy lemon curd . 😭🤔😓 nice try I thought🤣
