I started doing brisket about 3 years ago. I'm my country it's very uncommon, so it's very hard to find entire brisket cuts, as they just cut it in smaller pieces ready to go in the store. That difficult ended being what caused me to have a even better brisket: I found a guy who has a slaughterhouse, and I simply buy from him, just order 2 or 3 days before I need it, and he sells me it very fresh, what gives even more quality to the final product. Now I'm trying some pork cuts, learning some new stuff to add to my family's weekends. Hope you guys try doing it yourselves... It's kinda hard in the beginning, but very pleasant as you develop your own technique.

This guy opened up a shop in LA called Slab. It’s not the best bbq, but its certainly very good overall. You get a bit more of a craft quality vibe than a lot of the other bbq spots, so its definitely worth trying. Their collard greens are fantastic, they have a different recipe than most but its a great clean tasting specimen.

@@matthernandez5721 I'm not bashing on anyone having to use sauce since it adds variations in one's dining experience. It's more fun for your taste buds. But from my experience trying out South Carolina and Kansas style BBQs, the best of Texas styles just seems more tender, more juicy, and more flavorful without the sauce, whereas others use sauce to cover up mistakes in the smoking/cooking process or make the sauce the focus rather than the meat. You might recall having come across something dry or unflavorful and wanting sauce to make the dish more palatable. Or a time you added sauce for more complexity. Sauce is good for the right reasons.

I'm also from Central Texas and maybe your BBQ is not the best as you say, but it sure looks great to me. I have not been back to Texas for over 3 years and I really, really miss my BBQ, especially the brisket. FYI: Maybe add a couple of dill pickle chips to the sandwich. At least I like that. Great amount of onions you were adding though.
