I made the brisket and potato salad a couple days ago. The brisket turned out great. I used a stick blender to grind up the basting sauce. However, the potato salad was the star of the show. I live in Texas and have never tasted such great potato salad. My son who hates potato salad even loved it. Thank you very much.

That's a gorgeous brisket. Nice bark, nice smoke ring and it looks juicy and tender. No argument there. You even get extra points for using mesquite. As for "Texas style"? Not so much. Texans wouldn't score the fat cap and they usually don't baste the meat while it's cooking. Still... We'd feel privileged to eat it. Thank you so very much for posting this.

Very similar to a Texas BBQ / Braai. Nice job! Love the onion sauce basting, as well. Lekker mooi! BTW, not sure if you were making a brine for future fermentation, but use rock or sea salt. Iodized salt doesn't work well.
