Great video Zack! I've tried skin-on chicken drums, thighs, and breasts on my PB vertical a few times. The last time was about 6 weeks ago when I did skin-on thighs. The skin was so rubbery that it could have been used to re-tread tires. It was even difficult to cut with a sharp serrated knife. This experience was no different from my previous attempts. I swore I would never do chicken on my vertical again! (Back to my gas grill where the skin is edible!) However, this video makes me feel like I need to give it one more try. Thanks!

Most in Texas do exactly what you did, only we tend Tom do 1/2 chickens, not whole. I may be in the minority, but I’ll take a smoked SPG chicken over brisket any day. God put chickens on the earth to smoke, grill, and provide eggs. Yours looks Juicy as a prom queen on prom night.

I find I get a little more smoke up top and more consistent temps up away from the burn pot.

These cooks aren’t really long enough to dry out the water pan. I keep an eye on it though.

Birds look fantastic. I bet the skin started getting soft because you covered it during the rest. I wouldnt know, Mine starts rubbery and I just peel it off and feed my dog a treat
