When it comes to barbecuing, this recipe is an absolute classic. Pork jowl is a cut that is greatly underappreciated in North America. It is a flat, grill-friendly piece of pork that is incredibly flavourful because of the fat that runs through the meat. In Thailand, you can find grilled pork jowl at restaurants specializing in Isaan or northeastern Thai food. Serve this with some papaya salad and sticky rice and you're in heaven!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. Omg people who haven’t tried this recipe, please do!!!! So delicious, reminds me of good memories in Thailand! For those who don’t have outdoor grill, like I do, I put it in the air fryer at 190C for 10 minutes, flipped and cook it for another 3-4 minutes (or until both side is browned) and it turned out soo good! Thank you for the awesome recipe :)

So interesting what different cultures use the same cut of meat for. This look s so good! In Macedonia, we love pork neck (or jowl), and it's called VRAT. We often all the time slice it very thin (like bacon), and it's smoked (also like bacon, lol). We use it in MANY recipes, but out favourite is the simplest - called TOCT (like toast) Huge round bread, sliced in half - inside add the vrat, kaskaval cheese, some ketchup or mayo (not mandatory), then closed, buttered on the top and bottom, and pressed in a panini press till thin and crispy, and ooey gooey in the middle. LOL. We also use it for stuffing rolled meats, or wrapping around other meats. Thanks for sharing this interesting yummy video!

The pork is marinating but I made the jeow. Omg, it’s so flavorful and balanced, and delicious. I saw that it goes well with fruit, so I tried that and am hooked!

Hog jowls are about The Best cut of meat on a pig ! Tender, it will melt in your mouth. And flavorful !

I've waiting so long for this recipe :p Is there any difference in taste cooking it over coal (often very slowly) like they do in Thailand? Or is it just a matter of how long you have to wait to gobble it down?

Cooking over charcoal will always taste different from gas grill because of the coal itself, and slow/low heat will get you more evenly cooked pork if you've got the time and the patience :)

Wonderful dish~but for the dipping sauce, why don't you just fry the shallots first but put it in as raw?

Because we don´t want the shallots totallly cooked. With just the residual heat, you can bring out the flavor without losing the crunchiness.

HI! Not if you're in Canada or the US (at least) - the issues with rare to medium pork are not an issue here as Trichinellosis has been pretty much wiped out - so you'll see restaurants doing the same thing here. If you are elsewhere then of course it depends on your location so maybe Google it first :) See www.pork.org/news/new-usda-guidelines-lower-pork-cooking-temperature and www.usda.gov/media/blog/2011/05/25/cooking-meat-check-new-recommended-temperatures as two sources for information on this, but there are several others. After watching a few videos from this channel, I have bought a big bottle Thai soy sauce and a bottle of fish sauce. Last week I tried to sautee hard boiled eggs in oil with garlic, soy sauce, Indian chilli powder and chopped curry leaves. I have to say I was overwhelmed by the smell of Thai soy sauce. It was different from the soy we find in Indian restaurant. My parents(conservative Indians) complained that the kitchen stank. But the eggs were delicious. Is this normal? Is the smell of that condiment acquired over time? I still have to open the fish sauce. A word of advice on how and when I should use them both will be appreciated. Thanks. Love your videos.

Thai soy sauce should not smell strong at all. I wonder if you got the wrong thing...or which brand did you get?

Oh god. I just looked at the bottle. It is not Thai soy sauce. It is from Singapore. My mistake. This bottle was in the Thai foods section. Sorry Pai, my bad. But the fish sauce is Thai brand - "Thai Heritage". I didn't open it yet.

The Jowl looks like a porkish flank steak. If I cannot find jowl here, does the cooking goddess Pai have any alternative cut to suggest?

No, it is not still raw. Just not well done. Pork is safe to eat after reaching internal temp of 145F which is about medium.
