Frying it made the meat dry and chewy... i would just steam those and enjoy its natural sweet flavor.

Yeah, all the sauce would overpower the meat. Additionally, you have to really force the carapace open and dig the meat out with your fingers. Fine, I’ll pay $2.00 bucks for that. This must be street food.

We can eat the shell. In Asia it’s done for certain shrimp. As long as the shell is thin and shrimp is passed through a pan with a sauce. It also give the meat a very good flavor ❤.

Salted duck eggs are opened that way. The shells are very soft, they don't harm your knife. Opening the eggs with something blunt is messy and annoying.

Supposedly the shell can be eaten, but if it's not edible maybe they expect diners to actually eat it the way we eat artichokes, so we can get the egg sauce and the meat at the same time.

Wow!!! Sure don't see any seafood like that where I live here in Krakow, Poland. What a pity. I can buy duck but not duck eggs. I can buy frozen Thai shrimp around 2 to 3 centimeters in size that here they call jumbo but nothing like those big guys. Thailand is a culinary paradise. Poland and central Europe in general is a culinary wasteland by comparison.

Mantis Shrimps!! YUMMY! so wierd looking yet soooo tasty! They're like a cross between a Shrimp and a lobster , too bad they're not so Cheap or popular outside Asia , i usually avoid buying the live ones as they are so agressive and strong ! They have sharp pointy Paws that can really hurt! The cooking technique is really impressive as i've never seen such a recipe before! As seen the Eggs were baked not boiled for a better taste & color! Thanks for aGreat job!
