I thought he would make some kind of abalone foie gras from the abalone liver, but it became a complimentary sauce served with it. I guess they do that to show the many flavors of the abalone. I don't know what kind of cooked/marinated fish guts came after that though. But, damn those knife skills. Not only how the eel was prepared, but he made some serrated edges to the abalone as he cut it. That was truly masterfully done!

When this virus is over and done with- I hope to LOSE IT- by traveling and exploring various cultures and eating different kinds of food! This channel does an AMAZING job at highlighting fresh food from around the globe, and I love that he or she doesn't talk, they let the food speak for itself, what an EXPERIENCE. I only wish that they would put in captions or under the heading- what each dish was. I watch so many of these videos but often don't know what to ask for (when things open back up.) Does anyone know what that last dish was? The one that was grayish brown in color and gelatinous? It looks a little scary- but I bet the flavors are explosive. Continue to be curious Travel Thirsty fans!

It's called Ikejime, what it does is destroy the fishes brain and spinal cord, preventing it from causing the reaction that makes the fish go bad faster, allowing it to be preserved more effectively and longer, when this is done it prevents the fish from producing lactic acid and ammonia, which make fish go bad quickly, and also improves the taste by not allowing those chemicals to be released.
