Gaeng Hung Lay is one of the most iconic dishes of Northern Thailand, and arguably one of the tastiest! Pork belly and pork ribs are slowly stewed in a WHOLE bunch of herbs and spices. The result is tender fatty pieces of pork that has been entirely permeated by the rich and aromatic sauce. It is a dish to impress, and though it takes time, most of the process is hands-off!
This dish came to Northern Thailand via Myanmar, which in turn has a lot of Indian influences on their cuisine. This is why there is a lot of spices in this recipe, and you can use Indian garam masala for it as well!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. I lived in Chiang mai for 16 years and this is one of the best curries I have ever had, with some sai oua and larb, also have you ever had naam nang? The buffalo skin done on the BBQ, great with sang som.

This curry reminds me when I was a fresh man in Chiang Mai University. It is the first Northern dish which I fell in love with because it was not too spicy but flavorful and could get along well with soft and warm steamed sticky rice.

I'm from Chiang Rai, The Optional ingredients in many different part of northern of Thailand are roasted peanut and pineapple, so many recipes use salted garlic instead raw garlic.

Thank you for this recipe. For those of you who have never had pork belly, once you have had it - whether it is cooked this way or any other way - even the most expensive cut of steak will taste bland by comparison. If I knew I had one meal to eat, before I died, it would include a big plate of pork belly.

This is my most favorite dish ever and ever. I eat this growing up in the north of Thailand and still cook a huge pot once or twice a month and freeze it so I can enjoy for the whole month. Living in UK now, I normally use normal red curry paste and add a mix of curry powder and garam masala for ease. Thank you for sharing this and good job P Pai!

any idea the name of a dish i always have in nong khai, its a kind of pork sausage that has loads of garlic and spice and is served with raw baby garlic, i just love it! Only one place i have seen this.

I have tried that curry once in a Thai Restaurant in New York and I love it. It reminds me so much of Filipino Pork Belly Adobo and it also goes very well with rice.

I bought some pork belly to cook Filipino adobo. Then I saw this recipe and decided to try it out. It smells heavenly while simmering away. Glad I had most of the ingredients in some shape or form readily at home! :)

I just had this in a local Sukhumvit restaurant with my more-than-girlfriend and her friends and immediately looked it up when I got home. And the Northern Thai sausage. My God it was all so delicious. Today I have secretly resolved to become an expert in the dishes of this region. :) Of course, I'm also an instant subscriber! :)

Thank you Pai. I made this yesterday and I had an epiphany. It was the best thing I have ever eaten in my life. I am not a fan of the skin in the pork belly when stewed so used a pork loin piece that had a decent amount of fat. The flavor of this dish is so deep and complex, it is like a party in your mouth at every bite. I am looking forward to trying your rendang recipe. But for me this is the winner of the worlds’ most flavorful dish. Thank you for sharing.

Pailin, i tried this curry and it is not the usual thai curry that we usually get here in the states! I am used to the curry that is sweet and creamy. I should have known based on the recipe but Somehow it didnt click until i tasted it. I was shocked but as i kept eating it, i started to like it. The pork belly and flavor were delicious! So FYI non thai people like me: this is a very authentic type of curry that is very strong. Thanks for introducing me the authentic Thai food.

I am retired in Thailand and I love this stuff. I watched a guy while he grounded all of the ingredients and made the paste. I had to ensure that he removed all of the fat though. It may taste good but there is too much fat unless you specify otherwise. My favorite Thai dish.

I made this last week and it was great! The curry smelled awesome when it was cooking. It's too bad you can't share smell on the internet. The shrimp paste was a nice touch. Can you make Nam Prik Ong? I made it today and I want to see your take on it. That's a very good Northern dish too.

ultrage74 As I’m a northern Thai. I usually eat it plain with sticky rice. (no vegetables at all! haha) But if i recommend for you, any kind of fresh leafy vegetables will go well with it. Since this curry is heavily loaded with numerous spice and is very very very very very fatty and oily, you will really need the freshness!
