I just prepared this dish for dinner and my husband and I were absolutely blown away by its deliciousness. It was unbelievably good, so good that we devoured the entire pot. Since I couldn't find lemon balm, I substituted mint and it worked perfectly. The spices used in this soup complemented the potatoes and tomatoes perfectly. It tasted so healthy and so good. We also tried her other soup, the one with carrots and potatoes. That one was equally delicious. Planning to cook these healing soups at least twice a month. Thank you so much for sharing your vegan food. It's hard to find tasty vegan food here in the U.S. A lot of vegan food here are so greasy and salty, which defeats the purpose of choosing a vegan diet. So glad to find your food channel. The ingredients you use happened to be our favorites.
