A shorter video for you today - but a recap of a wonderful family weekend over this past Thanksgiving holiday. The food was of course wonderful, but better than that - my mother's only surviving brother and his wife came down and spent a wonderful 4 days with us. My mother's health is deteriorating as you know, and this is probably the last time these two will be together. it was a happy time as well as a reflective time for them and us. She is 94 and he is 93 (almost twins). On their last night, we all were together to reminisce, sing some old hymns, and pray. Truly remarkable to hear how God has been their mainstay and comfort.
I also included some recipes below of some side dishes I made that were a hit. Hope you ENJOY!
SMOTHERED GREEN BEANS
Servings: 8-10
INGREDIENTS:
5 (15oz) Cans cut greens beans (drained)
1 lb Bacon
2/3 Cup Brown Sugar
1/4 Cup Melted Butter
1/4 Cup Low Sodium Soy Sauce
1 Tsp Garlic Powder
INSTRUCTIONS:
Preheat oven to 350 degrees
Pour green beans into an ungreased 9x13-inch baking dish.
In a large skillet, cook bacon over medium heat until crisp. Remove from skillet, drain on paper towels, and chop. S[rinkle cooked bacon on top of green beans.
Mix brown sugar, melted butter, soy sauce, and garlic powder together. Pour over green beans.
Bake uncovered for 40 minutes. Enjoy!
KOREAN STREET CORN
INGREDIENTS:
12 cups corn
8-12 tbsp mayonnaise
4 tsp sugar
8-12 tbsp spring onion, finely chopped
4 tsp dried parsley
salt & pepper to taste
4 cups mozzarella cheese, grated
4 tsp butter, for greasing the baking dish
INSTRUCTIONS:
Preheat your oven to 200 C. Grease your cast iron skillet or oven-proof dish with butter.
Combine corn, mayonnaise, sugar, salt, pepper, dried parsley, and spring onions in a larger bowl.
Transfer to a greased pan and top with cheese.
Bake at 200 C for 15 minutes until the mixture is bubbling, the cheese melted, and nicely browned on top.
Take it out of the oven, let it cool for 5 minutes, serve, and enjoy!
