It's not worth risking missing the padding just to please ego. If they go 100% even if it's under 1% chance to miss and break their shins on the metal behind the pad. Secret behind getting high numbers on this machine is sure all the basics good technique and so on, but the most significant one is the follow through, you can see they are pulling the kicks, the number would be around 2-3x what we see here if they tried to go "through" the target, like they do, and visualize in Muay Thai.

Because they aren't. When Joe Rogan shot a video of him kicking this he went 100% and then later admitted he damaged his knee ligaments. What athlete wants to lose their career for a high score on a machine they aren't even getting paid for?

The first kicks are strictly kickboxing trained angle for body kicks under the arm into the rib. Problem with that is the cube reads direct force. Turn it in, redirect the force straight through the cube you get a better reading. Also hit the center.

They were striking with their shins and ankles, but Saenchai struck with his foot and accelerated it a lot at the last second, driving it in with his hips. Big difference in technique.
