Italian foodie here. Good job sonny! Just a couple of tips that I use for my anti-garlic friends: I usually remove the "soul" of the garlic (that little green core) and then chop it real good and let it cook in the oil for at least 15mins at minimum heat so it becomes almost a cream. The other passages are pretty much the same. Also, spaghetti is the traditional pasta, but you can use whatever you want as this is the "midnight-pre-hangover" dish, so who cares 🙂

This is the classic "pasta aglio olio e peperonino" (literally pasta with garlic, oil and chilli ). Abroad many think that Italian cuisine is difficult, and complicate the recipes with stupid and non-Italian passages. You have prepared this dish with simplicity, according to the Italian spirit. what can I say, that dude can cook!

Aglio e Olio is a staple meal and I make it at least once a week and every time I make it I have the exact same reaction. Simplicity really is the best and I still can't believe how incredible this dish is with only five ingredients (7 if you use lemon and a little pecorino to finish like I do)

I feel like I’m just hanging out with Sonny in his kitchen for this video - good vibes. Also, the pasta aguiolioliolio is my new favorite weeknight dinner! I like to add a sprinkle of parmesan (the real stuff) and tonight added shrimp for some protein. Worked out pretty well.

Another tip, leave the garlic in the pan (off heat) while the parts is cooking. Then turn on low 2 minuted before pasta is done. When pasts is straining turn the pan on full of garlic and oil, by the time you've strained it the pan is hot enough for the garlic. Turn around and add the pasta to the garlic pan and turn off immediately. Perfect 👌🏼

I've made this dish for many years. My mom's recipe calls for pasta water. The sauce becomes creamy without butter or cream. But chili oil? Must try that. Thanks Sonny!!

Dude has skills. If I were to do this, you'd see a lot of red garlic slices. The true beauty of the mandolin though, is that it creates slices of finger tip and garlic that cook at the same rate.

I took the tip of my thumb off. Slicing a big mushroom so I should have been totally safe - but the mushroom got hung up and rolled and the pain began. That flippin’ hurt! Never go without the guard - and I have the cut proof glove too!

I bought a mandolin from Pampered Chef in 1993, and white making slaw upon the first use, I sliced the pad of my pointer finger off. I’m still not sure how I did that, but I wasn’t using the guard, so that’s definitely my fault. The mandolin was washed, reboxed, and given to a friend the next day!
