"The Art and Science of Low Carbohydrate Living" by, Jeff S. Volek, PhD, RD and Stephen D. Phiney, MD, PhD is "an expert guide to making the life-saving benefits of carbohydrate restriction sustainable and enjoyable." "Jeff Volek is a dietitian-scientist who has spent decades studying diet and exercise effects on health and performance....Steve Phinney is a physician-scientist who has spent 35 plus years studying diet, exercise, fatty acids, and inflammation."
This is the first book I read when I started on my Keto journey. Starting any new dietary program can be dangerous if you don't understand what changes your body will go through scientifically. Our bodies require a specific balance of macro-nutrients for optimal health. When we alter those quantities it affects all the cells in our bodies. Having this clinical guide to help me navigate the biology of ketosis has been invaluable.
This book will teach you what macro-nutrients are, why each is important, and in what quantities your body needs them. The authors address the history of low carbohydrate diets, the concerns and misconceptions of keto, and the application of this kind of lifestyle. I appreciated the clinical analysis of past studies done on people who have undertaken this diet and also the inclusion of some recipes and weekly meal examples at the end.
They are careful to cover the entire process from just starting out to reaching your goals and maintaining them. I highly recommend this book for anyone who is interested in learning about what low carbohydrate living really is. This is an excellent book to gift to your doctor if they are unfamiliar with the science and benefits of low carbohydrate eating.
Disclaimer: I am not a doctor nor a researcher and am making this recommendation based on my own personal experience. Any changes made to your diet should begin with a visit to your doctor to determine if it is the right thing for you. I am not advising anyone undertake any changes in their health I am simply reviewing a book I found helpful.
