Learn how to make the best homemade baba ganoush recipe. This recipe is very easy to make, vegan, perfect as a dip or as a side dish. If you are not familiar with baba ganoush, it's a middle eastern dip made of roasted or grilled eggplants, blended with tahini, olive oil and garlic. The result is creamy, rich and smoky side dish.

Ingredients:
2 Medium-large eggplants
2 Garlic cloves, crushed
1/3 cup (80g) Tahini, raw
1/4 cup (60ml) Olive oil
2 tablespoons Lemon juice
Salt to taste
1/2 teaspoon Cumin
1/4 teaspoon Paprika
For garnishing (optional):
Paprika
Olive oil
Parsley, chopped
Directions:
1. Preheat oven to 450F (225C). Line a baking tray with parchment paper or with a foil.
2. Pierce the eggplants with a fork, place them on the baking sheet and roast them for 40-50 minutes, or until it is soft and collapses to the touch. Remove from the oven and allow to cool.
3. Peel the skin (or just scoop the flesh out) and remove as much seeds as possible. Drain the eggplants from the liquids and place in a food processor.
4. Add garlic, lemon juice, olive oil, tahini, salt, pepper and paprika. Process just until everything is blended, do not over process.
5. Transfer to a serving dish, sprinkle with chopped parsley, paprika, and some olive oil. Serve with pita and veggies.

I have heard of baba ganoush being mentioned on TV. Never knew what it was but may be some Middle Eastern dish. Now I think I can make it. Looks easy enough. BTW, I love your videos, short, to the point and end products look so good.

dont waste your time. it has too much lemon juice, tahini, and olive oil. these obliterate the eggplant flavor, which is the basis of the recipe. it's nothing like the authentic flavor.

Actually this is a Levant recipe which includes the countries Syria, Lebanon Iraq, Palestine and Jordan. It is important not just to roast but to char the skin which gives the eggplant a smoky flavor. That smokey flavor is part of baba ganoush.

Pretty easy recipe to make. The outcome is gorgeous, and to look prettier and increase the flavor of it, I added pomegranate on top of it ss well as mint leaves.

My chef insists on salting the wet eggplant before roasting. Suppose it has to do with pulling out some of the bitterness…

Btw my grandmother from Ukraine put it directly on the Flame and turned it i think she chopped it in a wooden bowl with onion garlic and olive oil she just called it chopped eggplant

When it mentions Paprika… is it regular Paprika that has no flavor but for aesthetic purposes, or sweet or smokey paprika that imparts flavor?

Worst recipe I've seen so far. Baba ganoush is supposed to still have the eggplant texture. Reason why the eggplant should just be smashed with a fork or something. The processed eggplant is just disgusting. You'll never see that in a lebanese restaurant.

Sorry, but this is not Baba Ghanouch, but Humus with eggplant taste! Come on. Baba Ghanouch must never go into that blending machine, but chopped by a large knife by hand. Also the mix needs chopped mint and parsley, among other things.
