Just in case you didn't start yet, aquafaba for the egg in this won't work. What you need is a binder and aquafa's not it. You would have better results with plain flour, although both breadcrumbs and flour at the same time means you shall have to test and adjust because the end result might be too dry.

I have recently made a switch to Mediterranean style cooking for my health. I am very much a beginner. Your recipes help so much. I made this for lunch today. I added some tahini since I love it in humas. It was about 1 heaping TBSP. I liked the patty a lot. But I felt it needed a bit of a bite. I think more garlic would add a lot to it, also I think arugula would be great with it.

Thank you for another ❤ remarkable recipe, Albert. I save the Aquafaba (liquid from canned chickpeas). SO MANY USES: egg/egg white substitute, meringues, mayo ... aquafaba is sort of MAGIC!! Not only egg, but dairy substitute for we who are vegans. Using a hand mixer, I whip the liquid into peaks for meringues and macaroons. (add cream of tartar).

This was an awesome recipe… super easy to make and this is coming from someone who hates to cook… I didn’t have any carrots so I used chopped red pepper… then later on I snacked on one with just cocktail sauce… because I finished the aioli sauce which was incredible…

@ in my experience it works well and acts just like scrambled eggs. The taste by itself it a bit mild, so I often bump up the eggy taste with some black salt (Kala Namak)

No. They are processed. The peas are hard that is why you have to soak them overnight and cook. Canned ones is easy but the dried one are better 😊

they are cooked then canned , along with the cooking liquid. Yes, they are soft, but I prefer dried chickpeas, tins contain Pfas materials which are toxic

@ absolutely. They were delicious. The outer formed a dryish crust but that was very good too and for me, better than a fried and in oil outcome. I ate them as paddies, not on rolls and I melted cheese on one which was super tasty. These are the first veg paddies I’ve really liked and quick and easy. Cheers. 🦘🇦🇺

To make it Vegan leave out the egg. Use more veggies. You can use whatever you like Chickpeas and Black Beans if you want to make more than three. Mash in mushroom and beetroot. Whatever. Plenty of Vegan options.
