After trying a new Mac n cheese recipe every holiday, and never finding exactly what I wanted it to be...I tried this one for Thanksgiving this year! Let me tell you...I had NO leftovers! Mine be creamy soon as I take it out the oven but about I serve it an hour later it be stiff and a bit dry . Am I leaving it in the oven too long or something maybe ?

Hello Foxxy for the best results try making it closer to when it would be served fresh out the oven letting it rest about 5-10 minutes at the max. How long did you leave it in for? You could also make extra cheese sauce as well

I am one of those lactose intolerant people and I refuse to give up cheese. Cheese is my middle name. The only thing is nobody in my family likes pepper jack so I would have to use something else. I would probably use either gruyere cheese or smoked gouda with bacon. But it looks delicious.

If you make this version, you will have the least cheesy mac & cheese possible. The purpose of the roux is the keep the sauce from breaking. You DO NOT need two sticks of butter (and the equivalent flour) to accomplish that! A half a stick of butter and flour mixed together will be enough, as will using just whole milk to make the bechamel sauce. What you have made is butter and milk-flavored goop with a hint of cheese flavor in it. Cut back the butter and flour and use only milk. Then mix in ALL of the cheese into the mixture to finally get the cheese sauce right! And FYI, bechamel sauce was invented in *France,* NOT Italy.

@@DiscoveredFlavor Respectfully, every bite of this will be greasy and not cheesy at all. All you will taste is butter and flour. There is too much heavy cream as well. If you want it to taste like actual mac & cheese, make 1/2 of the amount of roux and increase the amount of cheese by 50%. But to each his own.

@discoveredflavor actually I've made the roux plenty of times and made and ate a roux myself and never have I ever had to use 2 sticks of butter lol. Like the gentleman said above all you need is a 1/2 a stick of butter and half the flour and add your cream and cheeses but go off sir 😂

Have brought me back to my childhood, my daddy would make the same way the only difference is he put a pinch of cinnamon, I think it is because he was Greek the put cinnamon on everything love you ❤❤❤❤
