For everyone looking for ppl who tried the recipe in the comment section you made it lol I just tried the recipe and it was really yummy and delicious and the amount of the salt was really balanced once you combine the broth with the noodles .. even my brothers who rarely see them express their joy while eating my cooking, was eating happily and with joy but i had to change how i make dashi stock by using small dried fishs and shrimps because they are the only things available in my kitchen to make the stock .. so, i made my dashi stock by using 4cups of water and soak in it around half a cup of small dried fishes and half a cup of small dried shrimps for 10 minutes and follow the cooking process as same as any dashi stock recipe. Looks like a recipe that I'll be trying soon with some adjustments to make it plant based & low fat: skip the oil (saute with small splashes of water as necessary), skip the meat, and use vegan dashi. I'd serve this with a plate of steamed broccoli and rice. Love the use of curry seasoning! I can't wait to give it a try :)

I really like using the curry roux blocks (House, Vermont curry etc). Not sure what it is, but they really make a rich flavor I haven't been able to replicate with my own spices.

But alcohol gets burned up / evaporates when cooking, so it only flavors the food. But if you are really concerned you can use the cheap mirin knock off "aji-mirin" which is high fructose corn syrup.
