Good video. Going to get a copper plate today. Cooking shark friday. About how long did u leave on grill. Looks like u flipped about a minute into it and then closed the grill. Maybe four minutes total ? I agree last time i did shark it was too chewy maybe cooked too long.

i had the grill at 325 and did about 1 min per side and flipped it so that each side had a total time of about 2mins. then let it rest for about 8 mins. i usually have the grill at 250 or 275 but this shark went on cold, so i used a higher temp. good luck and have fun. i had another video where i pound the shark then flash fry it. made great sandwiches.

Did you bleed the bonnet head when caught it and is that necessary

sometimes I bleed right away, sometimes I just ice. Bleeding does help the meat a little.

That's exactly why i was searching for "shark prep" videos. So i've heard that before you season/cook shark you're supposed to rinse the meat in fresh water because that urine they secrete adds amonia to the meat(which would make it taste like 3-4 day old fish i would think). Some have told me that you're supposed to soak the meat for an hour. I've heard others says you need to add milk to the water. Do you use any of these prep techniques? And if so - is it safe to say its already been done if bought from a fish market as opposed to a catch & cook?
