So can I substitute arrowroot starch for cornstarch? I just don't eat cornstarch but I have to start finding a way to make my own Chinese, because I can't eat soy, and they cook and soy oil and of course use soy sauce at all of the Chinese places. So I am living for this Asian playlist, but I suppose at some point I need to look up paleo Chinese recipes. Just less fun, as I like Sam.

the use of cornstarch and soy sauce is a Chinese technique called Velveting Meat. Guarantee, any meat you get from a Chinese restaurant will have been coated in the base mix of cornstarch and soy sauce along with other sauces and seasonings depending on the recipe.

I get Kung Pao Chicken from our local Chinese shop. They do it about the same but with Cashew nuts as well. You should add some and try it. Served with Basmati Rice

Hey Sam. Love your channel! Kung Pao Chicken.... I had the best in Taiwan when I was working there. Its not so complicated and most of it is in the sauce that I dont know a sh*t about! The ingredients: Chicken like in your video, Garlic, plenty (5-10 cloves) and just crushed under the knife, ginger about pea size chopped, about a large tabel spoon, and then the chili pebbers like in your video, then peanuts. Thats it! No veggies. Much more oil in the wok.... :-)

My friends and I used to scour Taipei in search of the best Kung Pao Chicken 宮保雞丁. I don't live there anymore, but it looks like this recipe will ensure that my kitchen serves the best [bleep] Kung Pao Chicken in my zip code. Not to be pedantic, but wasn't the soy sauce you used two different kinds, one being dark soy sauce (the first one) and the second the light soy sauce usually used for seasoning? We always have both types, as well as Shaoxing cooking wine, on hand at all times.

Most recipes on KZbin seem to chop the chilies in half and remove the seeds unless you want more heat. The main heat in the dish comes from the Sichuan peppercorns, which this recipe is missing.

To keep chicken breast from during out you add baking soda to the chicken veggie cooking it.. And you add the corn starch to the sauce because your sauce at the end is too watery and you never use whole chilis.. You always cut them because you don't want to bite into a whole chili while eating it.. That is why they are always cut in this recipe.. And Kung Pao has peanuts in it.. Just a few tips

Incorrect use of baking soda, you put a wee bit into it marinading to tenderise tougher meat, coating in the corn flour helps keep the moistness in and thicken the sauce. Just a tip also the toasted/part crushed peanuts are added as garnish
