I M P O R T A N T ⚠️ make sure to clean and rinse the tripe really good to remove any smell from it.
TIP: if you soak overnight, DO NOT add the lime peel it will make the honeycomb tripe bitter
Ingredients: 8-10 servings
5 lbs beef honeycomb tripe
Beef feet (optional)
3/4 cup freshly squeezed lime juice
20 New Mexico Chile pods
4 Chile Pasilla
1 white onion plus 1/4
1 head of garlic plus 4 cloves
1 large can (110oz) precooked hominy
4 bay leaves
Epazote or cilantro
1 tsp black pepper
Salt i used 3 tbsp
Menudo mix or oregano
1 serving of love 💕

I really enjoy watching your videos. I understand you are from Arizona and I find it interesting how your recipes often differ a little bit from how we do the same dishes in south Texas. Mexican cooking along the border and in the Southwest has so many variations. I find it interesting and what makes our food the best in the world. One thing I agree with you is the hominy. To me menudo must have hominy or it just isn't done right, lol! I also like it with a lot of it, makes all the difference in the world. All the best to you.

Yeah agree love the hominy! Im from mexico and I'm trying to remember if it had hominy down there, but its been a while i was a small kid like 5 when i last ate it down there , one thing though the menudo in mexico atleast the region where im from (Pacific coast) is the menudo is white not red. I grew up in south texas and yep i like the red menudo with the hominy!

I love menudo and just bought 32 oz from a cafe for $10, the only cafe here rhat sells it on weekends only. I have yet to make it perfect. I get confused because my Memaw added pork neck bones to the initial broth. But will try again this year.
