Yeah, that came across to me as being a little bit on the bossy side. If I were his editor I would have had him reword that to say the following... "If you're a fan of boiling lobsters, I'm going to suggest that you stop doing that right away". When he says I'm going to "need you to stop doing that", it almost brings across this feeling of like he's my employer I'm working for him he's my boss and here's how he wants it done. Or he's a private person who has hired a personal chef and he's informing the chef on his preferences. It just gives off this uppity I'm the boss and here's how you're going to do it kind of a thing. Where is a KZbin video is supposed to be more of a teaching and educational kind of a deal.

i know a lot of people that dont bother with knuckle meat, cause there isnt very much. same with the legs. altho real hardy new englanders eat the whole thing lol

another easy way to remove tail meat is to .... after you seperate the tail from the body, remove the small fins at the end by tearing them off then insert a finger and the tail meat slides out in one peice

This is why it's good to watch several videos to get information. He left some things out, but the tip about cutting the claw tips into a bowl was pretty smart for draining. I already know how to roll out the leg meat with a rolling pin from other videos... I call it "information triangulation". Meaning that you get your info from 3 different sources, and put it all together in a way that makes sense to you.

4 mistakes... 1: dont cook with the rubber bands 2: there is alot of meat in the legs 3 kill the lobster before doing anything to it 4: you didnt show us how to shell the knuckles

Thank you for another wonderful video Thomas Joseph&crew. However, you did not talk about pressing down and cracking each fold under the tail, I'm talking about the part you just cut with the Kitchen Scissors. I liked the tip about cutting the tips off of the claws, I'll be sure to try that next time I'm in Maine!

He doesn't really do a good job explaining things right, also he left out some things like you can get meat off the leg by simply cutting the tip off (the side where it connected to the body) and then simply take a roller and roll out the meat. This guy's way is just wasting away the lobster. instead of wasting time using scissors on the tail, you can squeeze the tail inwards and it will split the shell and then you can extract the meat.

Great video as always, thank you. I'd like to know more about what is actually edible in the body. I know you said to kinda pick through it, but isn't there certain things inside that you can't eat? In keeping with the spirit of this video, maybe make one showing how to crack & eat crabs. Now being from Maryland I've learned that there are flaky things in the body of a crab that you can't eat. Does that go for lobster & Soft Shelled Crabs as well? If you do a crab video perhaps you can address all my questions then. Thanks for having such an informative & helpful channel.

From Maine when we are removing tail meat we twist off flapper on end of tail then just push meat up and out of shell. I think easier. We only use scissors to cut up if meat is raw. Raw meat to soft to push up. The legs are very sweet also. I think most people are looking for tips on knuckle and legs.

I pressure cook them in my steam basket for 4 minutes. Then i rinse them off with cold water to stop the process. I either then make lemon butter or i make lobster rolls out of it. Nova scotia

amongst all the other things you forgot, you left out the cleaning of the center of the tail where the digestive tract runs. If you leave that in you are eating bottom-feeder crap..! The tail needs to be peeled from the top and opened up to reveal the vein running through the entire body. That gets thrown away. Also, the disgusting-looking green stuff is actually very favorable and great for making sauces and lobster bisque. Once the green liver is removed, there's quite a lot of good meat in the head. That should not be thrown out.

The main body has a lot of meat in it. The technique to eat that is to peal off the shell from the meat to get large chunks of meat from the main body. That’s the hardest part but done right you get large chunks of meat without mess.

Get a small rolling pin and pull the legs off. Run the rolling pin over the legs gently, after snipping a hole at the top. Beautiful little legs of lobster. Great Video.

Don't forget to peel back the top of the tail meat and scrape out any yucky poop stuff just like a shrimp! Thats where you'll find out if your lobster was a male or female, if you see red stuff, those are the eggs.

He makes it look hard to open a Lobster. When you're at a restaurant they don't give you kitchen shears and a back end of a Chef Knife...lol. Good advise on steaming the lobster instead plunging it in boiling water

When I have lobster at a restaurant, I always carry along a surgical dissecting scissors and a lobster pick. They work great and really shame the waitstaff and management for not providing the proper dining utensils.

i just break off the fanned part of the tail and the tail meat pops right out with a push of a finger thru the end.. No sissors necessary. Just my way taught by a Maine girl.
